frozen sweetcorn

Evening all.
After some ideas to use up a bag of frozen sweetcorn my OH and DS have decided they no longer like it and DD will only eat it covered in butter. so it is down to me to consume a big bag of it. now short of always having a portion with every meal what could i do. i made ham and veg fried rice last night. i know i could put it with some pasta but as its only for one person it would take forever to Finnish the bag.

    I do tuna and sweetcorn pasta:

    Cook pasta.

    While it's cooking out a tin of tuna into a bowl and mash it up with some cayenne pepper.

    Half way through pasta cooking time, add sweetcorn. When all cooked, drain and add tuna.

    Mix well, then put salad cream on it to moisten then serve and eat.

    Serves one greedy person or two normal people (I eat it all!).

    Add salt and pepper to taste.

  • You could try making a batch of this spicy sweetcorn soup. It is really yummy but I suppose it might just mean you're eating sweetcorn for even longer. I suppose you could freeze some of it when its made. Well I'll post the recipe anyway

    Sweetcorn chowder:
    1 tblsp olive oil
    1 onion, diced
    1 red pepper, chopped finely
    2 carrots, 1cm dice
    2 red chillies, diced
    1 tsp dried rosemary
    1 tsp dried thyme
    750ml vegetable stock
    475g sweetcorn
    2 potatoes, 1cm dice
    pinch cayenne
    lime juice
    4 tblsp milk (i use soy but dairy should be fine)
    1 tblsp maple syrup (can sub with sugar if you don't have this)

    Saute onions, peppers, carrots and chilli in oil until onions softened.
    Add herbs, salt and pepper, stock, sweetcorn, potatoes and cayenne. Cover and bring to a boil then reduce heat and simmer for 20 minutes or until the veg is all tender.
    Then uncover and simmer for 10 minutes to reduce slightly.
    Ladle out half the soup and blend until smooth. Then reutn it to the pan to create a creamy but chunky texture.
    Check the seasoning and add more chilli if desired. Stir in the lime to taste, soy milk and syrup and simmer for 5 minutes.
    Then allow to sit for 10 minutes before serving to allow the flavours to develop.

    cant you disguise it within meals so your family wont notice it so much? it's nice in a chicken pie but hopefully the other flavours would make it less noticeabe.

    will give the chowder a bash twinkle have tried ready made stuff and hated it but i dont like allot of ready made stuff. hate tinned lentil or veg soup but could easily eat a full pot of home made. if all else fails i'll give it to my mum she can eat anything lol gosh hungry again :rotfl:

    Have tried believe me. got away with it in soup as i blended it so it was like chicken sweetcorn from take away. they eat it but only because if they don't they don't get any of the BBQ ribs that follow lol if i try it and it is visible they spend ages picking it out or bin the whole dinner which makes my blood boil.

    you can put it in macaroni cheese. Also add a few mushrooms and finely chopped onion (cooked of course) if you've got some - delicious!
