If you have the MOT and insurance you should be able to do it online up to 15 days in advance I believe.

No you can't in the OP circumstances.

If the vehicle is currently SORN and you want tax for the following month, then the earlist you can tax is 2 working days in advance of the end of the month.

So for 1st of June, this would be May 29th at Post Office (as Sat is a PO working day). Or May 28th at DVLA Local Office.

If you intend to tax online or by phone then the earliest is June 1st as the electronic system cannot work it out!

If a vehicle is not currently taxed I think you are only allowed to tax it early if the first of the month is a Sunday and then you are only allowed to do it on the last working day.

The problem with taxing online is that by law you must "display" a current road fund licence.
I used to be indecisive but now I am not sure.

Nope, the law has changed on that...

    If your vehicle is taxed
You can apply from the 5th day of the month in which your current tax
disc runs out. Your new tax disc will come into force on the first day of
the next month and you should not display it on your vehicle until then.
If you are going to be abroad when your current tax disc runs out, you can
make your application up to two calendar months before your current tax
disc runs out. If you apply by post, you must send a letter explaining why
    you are applying early.
If your vehicle is not taxed or has a SORN
If you apply in the last two working days of a month, the tax disc can start
on the first day of the next month. If you apply before then, your tax disc will
be backdated to the start of the current month. (Saturday is classed as a
working day at Post Office® branches.)
    B When to apply
Do not use this form to tax a heavy goods vehicle (except for
showman’s goods), recovery vehicles or special trailers. For HGV
vehicles use a V85 and apply at a DVLA local office.

The above copied from V10 application.
F in Law is about to tax after SORN and DVLA advised 28th May or later for 1st June start of disc from Post Office. Or 1st June if taxing by 'phone direct with DVLA, obviously there will be a postal delay if doing the latter. I'm just quoting what DVLA told me which seems to coincide with the V10 form.

My Landy was sorned over winter. I retaxed it from 1 May. I went into the PO on 29 April with the V5,MOT and Insurance cert. No problem.

Remember that although you might be able to buy the disc on Friday or Saturday morning, it doesn't actually come into force until the start of June 1st.
