Report this to the HSE, rather than your employer, otherwise he will know who has reported it to them following any request from you to him to update the insurance that he fails to act upon.

Find newspaper articles of other people that have been sued and lost everything by an employee or site visitor because they didn't have insurance. Also find ones where the company owner had jail time for the same even without having an accident. Start leaving them in his post tray.

Sounds like your colleagues are as dumb as he is. You're not. Start looking for another job!

There is a penalty of £2500 for each day without cover, there is also a penalty of up to £1000 for failing to display or provide on request a copy of the certificate. He may want to review his decision - quickly.

I expect he has no Health and Safety Policy as well.

You could remind him that even if its a limited company that he as a director could in certain circumstances be sued personally if he has no employers liability insurance and their is a claim. That normally scares them into buying cover when they realise they could lose their home.
