any good hotels in istanbul?

Hi guys,
Im looking to take my mum away in august for a holiday. she has picked istanbul, turkey.
the only problem is she is not that keen on sunbathing with people who are generally naked but would probably like to visit the beach in the mornings.
so my question is, is this common practice in all of these beach hotels?
would i be better off booking in Sultanamet( the historic city)
would anyone be able to recommend any really nice hotels in either of these areas? apart from the four seasons, price isnt an issue.
any help would be greatly appreciated as I am totally confused with what to do:rolleyes:
