help; our mexico hol cancelled alternative suggestions please

hi, my hubby and me were due to fly to mexico (via miami) on fri 15th may but due to our travel insurance company cancelling all cover on mexico holidays we're trying to make alternative plans.
We had booked a twin centre package flying from heathrow to miami with virgin, a 3 night stay in 5 star miami hotel, then flying to cancun with mexicana air for 10 nights in all inclusive 5 star hotel, total cost £2776 between us. Our travel agent says we cannot get refunds or reroutes on mexicana air flights (thy are still flying in/out of mexico) but we can get a £750 refund on our cancun hotel. We would like to still go for the 3 night stay in miami but are looking for somewhere to go after that for 10 nights instead if mexico.
The problem is finding somewhere for 10 nights for around £750 between us at a similar standard to the 5 star all-inclusive hotel in mexico (bluebay grand esmerelda - riviera maya) and a flight from miami to the new destination.
We're just looking for somewhere relaxing and all-inclusive within budget. it's all been really stressful trying to sort this bloody holiday out, i'll be 19 weeks pregnant when we go so was hoping for a lovely rest before the baby comes. No such luck! can anyone help by suggesting alternative destinations?

    What about a cruise out of Miami - www.carnival.com or other cruiselines go out of there too.
