Dried Cranberries or Blueberries

I have two small bags of sweetened cranberries and two bags of blueberries.

Can anyone suggest a recipe to use these up. I could add them to cookies as I have a small bag of white chocolate buttons but I think I would rather make a cake.

Lots of recipes that I have seen have nuts in them, I don't have nuts in my cupboard just now. I've got basics like vanilla essense, various flours, sugar, eggs, butter, sunflower oil, etc.

My other thought was to make a yoghurt cake and bung some berries into that.

Thanks,
Michelle

    Hi chell,

They're lovely in muffins. These earlier threads might give you more ideas:

To be honest I would just snack on them straight, but then I like nibbling on nekkid dried fruit and not everyone does ;)

I tend to use cranberries in savoury cooking more than sweet - I add them into stuffings and sausagmeat concoctions and make a nice brie, mushroom and cranberry quiche too.

You could find Twink's Hobnob recipe and chuck them in.

Or make some oat bars with them.

If you need to make birthday presents any time soon they're great as a topping to the chocolate slabs which were once mentioned in Martin's weekly email... I made some for my family for Easter and they went down really well.

I used your suggestion and made Scotch pancakes with some cranberries. I'd had my Nan's old fashioned griddle pan for years to make Scotch pancakes but hadn't until today.

I then went out to get fruit and got a huge bag of bananas for 60p reduced to clear. I made a banana and cranberry loaf.

I agree with Twink's hobnobs. Just made a batch to take to my son in London at the weekend if they last that long.

I second this - anywhere you would usually use dried fruit. In baking, on cereal, on yoghurt... Cranberries are also quite nice in a couscous salad - I like mix chopped celery, chopped nuts, plenty of black pepper and olive oil into it.

Just had to say that I tried Twinks hobnob reipe today, I've been entertaining my 4 year old DS :) and they are absoloutely GORGEOUS, I chucked some dried cranberries in, really lovely. One question, sorry if it's dumb but can they be frozen? I want to save some for my Mum but won't see her until next week. I know if I don't freeze them I'll scoff them :)
