OK, here is another one for you
Quick prawn and ginger noodles
2 Squares of wholemeal noodles
75 g cooked peeled prawns (defrosted if applicable)
2 sliced Spring onions
1 crushed clove garlic (or 2 finely chopped)
handful of sliced mushrooms ($hitake or chestnut)
50g peas
50g sweetcorn
handful of dry toasted mixed seeds (sesame, pumkin, sunflower etc.)
handful of chopped corriander
2 tble teryaki sauce (or light soy)
½ inch square (ish) of peeled grated ginger
1 tablespoon of sesame oil (or olive oil)
Prepare some wholemeal noodles per the packet instructions, rinse well and drain.
While they are cooking heat the oil in a wok. Fry the garlic and ginger for 1 min, add the mushrooms and cook for 1 min.
Remove from heat and add spring onions, peas, sweetcorn, prawns and corriander.
Sprinkle with the seeds and teriake/soy sauce before serving.
A litle chopped chlli works well with this if you like it

I forgot to remind anyone that green tea speeds up the metabolism (there was a thread about this last summer, if I get chance later I'll look for it) - my favourite is Twinings Earl Grey green tea.0

I have an underactive thyroid too, and take thyroxin. I've found the OS diet (cooking from scratch) has stopped the weight gain but I'm struggling to get the weight down again.
I take seeds to work in little tubs to have a snacks. Eat plenty of fruit and veg and our bread is made in the Panasonic BM and we add 5 different seeds to the mix.
I'm looking forward to the better weather when I'll be able to do more walking and maybe start to do some cycling.Enjoying an MSE OS life0 -
Hope you've found some good recipes, my OH has v.low thyroid levels and as he also has lots of other conditions the prescription fee exemption is very MSE.
