From the list of benefical ingredients that you've given it looks like a risotto or pilaf type dish with the brown rice as the base to me. The lentils will make a soup and the pumpkin seeds are lovely toasted in a dry frying pan.

Ok, I can't give you any recipes because of copyright *but* I can recommend a very interesting book that has a few (not heaps) of wholesome recipes. Do remember that for the supplements, many can be derived from simply eating the right foods which are rich in those particular natural vitamins/minerals. (I've just recommended this book on a different thread, but I promise I'm not getting any commission:laugh: )

Obviously the series of books based on "You are What you Eat" have recipes incorporating seaweeds, nuts, seeds etc.

Best bet is to track down the books at your library (or get them to order them in if they don't have them already; they'll charge a small fee for that, but it's nominal) and then you can copy out any recipes that interest you.

Chinese sesame prawn toasts takes care of another couple of ingredients but it's fried so not good with the weight gaining - can't win really!0

OK, if you are serious about shifting weight and keeping your energy levels up it can be done but takes a lot of will power.
I take high dose thyroxine and am also diabetic and have a few other boring health issues going on that made it really important that I lose weight. And I did.
Get information on the GI diet and give it a go, it is all over the web just now and there is a lot on this forum too. It does work but it is not short term, change your eating habits gradually and permanently. Throw your scales out, it will be the best move you can make. Instead measure your progress with a tape measure, it has far more meaning.
Use the recipes provided by Diabetes UK and you are pretty much following the GI diet.
At the gym do you have a trainer? How often you go is less important than what you do when you are there.
Try this meal and variations of it at least once a week. This is a vegetarian option but you could have it with turkey.
Brown Basmati rice
with lentils in coconut (These are largish quantities as I bulk cook and freeze)
Turkey or Quorn fillets
Salad made as follows
Green leaves (your pref), chopped fresh tomato, cucumber, 1 avocado, 1 apple, sweetcorn. dress with a little lemon juice and olive oil, toss and sprinkle with dry toasted seeds and nuts per your diet list. Add sprouted seeds, chopped peppers, anything else you want really. Just keep the taste fresh, it is wonderful.
Snacks - keep temptation away by always having available raw vegetables and fruits to your taste (Not bananas though) and make your own mixed nuts and fruits mixes (organic apricots, brazils and cashews are a fav of mine)
Don't go overboard on the seeds and nuts, everything in moderation is the key.

Based on the title of the thread I was going to suggest the OS standby of "put it in the slow cooker with 1/2 pint stock & some veg".....then I realized you didn't actually want to bake your thyroid..............:doh:Post Natal Depression is the worst part of giving birth:p
