How do i make tagliatelle?

    Or how about this one?

    Lemon Tagliatelle
    175 g Tagliatelle
    50 g Greek strained yoghurt
    1/2 Rind of lemon
    1/2 tbsp Olive oil
    1/2 tsp Grated nutmeg
    Seasoning


    1. Cook the tagliatelle according to instructions until al dente.
    Drain thoroughly.

    2. Place the yoghurt in a small pan with the remaining ingredients.
    Bring to the boil then pour onto the pasta, stir well to coat
    and serve at once.

    Serve with the Spring Vegetables in a parcel.

    We had this last night
    tin of chopped tomatoes or tin of tomatoes chopped
    Garlic
    chopped up onion
    herbs if liked, I used oregano and parsley
    Diced meat I used some left over ham slices, but you can use chicken or even tuna

    Fry onion, garlic in olive oil until soft, add tomato and cook until sauce is as thick as you like it, add herbs and meat/fish so it warms thro (could heat meat/fish in microwave first)
    Cook pasta while all the above is happening, then add drained pasta to sauce and serve
    If you want a creamier sauce you could add some creme fraiche
  • how about some bacon or chorizo fried off in a pan, add onions and some peppers and mushrooms, and now for the secret ingrediant, add a genorous squeeze of ketchup and stir it together then stir thro the pasta, tastes lovely and you can use the same mix in a pasta bake

    Chilli prawn tagliatelle
    (serves 2)

    You will need:

    2 or 3 cloves of garlic
    2 or 3 red chillies
    Prawns
    Passata
    Olive oil
    Basil (fresh or dried)

    Cook taglietelle according to instructions on packet.

    In the meantime, crush the garlic, chop the chillies and fry gently in the olive oil. Add the prawns (I buy cooked ones so you are only heating them up really) and passata (about 1/3 carton is normally enough). Add the basil, leave to simmer until the pasta is cooked and mix together.

    You can also add some toasted pine nuts, I always forget though!

    Egg pasta. like tagliatelle, is usually served with cream- or dairy-based sauces.

    CARBONARA SAUCE

    Enough for pasta for 2

    INGREDIENTS

    4 slices of cooked ham
    100g of closed cup mushrooms
    2 cloves of garlic
    1 onion
    1 tablespoon of olive oil
    1 tablespoon of flour
    150ml carton of single cream
    1 teaspoon of mixed herbs
    Ground pepper to taste

    METHOD

    Cut the ham into 1cm (½ inch) pieces. Wipe the mushrooms clean. Cut the ends off the stalks and chop them into slices. Peel the garlic and chop it into tiny pieces. Peel the onion and chop it into tiny pieces.

    Put the oil into a frying pan on a medium heat. Add the onion and garlic. Cook for a couple of minutes until the onion has gone soft. Stir frequently to stop it sticking. Add the mushrooms, stir and cook for a couple more minutes. Add the flour and stir until it has absorbed the oil and juices in the pan. Add the cream, ham and herbs. Season with the pepper. Stir and cook for about a minute until it has made a smooth sauce.

    ADDITIONS & ALTERNATIVES

    Use bacon, cut into 1cm (½ inch) pieces and added at the same time as the onion and garlic, instead of the cooked ham. Use button mushrooms instead of closed cup mushrooms. Don’t use open cup mushrooms, as the brown underside discolours the sauce.

    TIPS

    This sauce is usually served with long, thin egg pasta, like tagliatelle.

    Always "take the pasta to the sauce". Put the pasta in the pan with the sauce and stir together until thoroughly coated.

  • Try cheats carbonara,

    fry bacon, and garlic, add creme fraiche and mushrooms (don't fry the mushrooms as they make the creme fraiche go brown). Cook the pasta then chuck it all in together. Instant dinner and you don't have to worry about the eggs scambling! :rotfl:

    Or

    Grate courgette fry in chilli oil (or normal olive oil) with dried / fresh chilli. Cook pasta stir through courgette with a some creme fraiche to coat the pasta.

    I like any pasta with grated cheese and pesto. Helps if you have wine and garlic bread though!

    Prawns with Tagliatelli: (Serves 2)

    Heat 1 tin chopped tomatoes in a frying pan (I 'mash' mine at this stage with a potato masher)
    Season to taste
    After 4 or 5 minutes, add prawns (I use supermarket value pack for about £1 - can't remember weight)
    After 2 minutes add a little cream (just enough to turn tomato sauce pink)
    Pour over pasta and serve with crusty bread

    This is a big favourite with DD, and very quick and easy to make.
    some people grin and bear it, others smile and do it :)

    I LOVE carbonara, but I don't like it made with cream-I just use bacon (or pancetta) garlic and eggs, with LOTS of grana padano cheese. Rick Stein had a fabulous recipe from the mediterranean escapes book, its so nice, really creamy but without actually any cream. My OH thought it had to have cream but is converted to this one. Recipe is on BBC food pages (not goodfoodmagazine just the one on the BBC website

    Tuna Tagliatelle
    All to taste and however many there are of you
    In a whizzy chopper put flat-leaf parsley, basil and garlic. When whizzed there needs to be at least 2 tbsp per person. While tagliatelle is cooking saute in a pan the whizzy chopper stuff with some olive oil, stir for a couple of minutes and add tin of tuna, lemon zest and juice of at least one lemon. When tagliatelle is cooked add finely grated parmesan (at least 1 tbsp per person). If not on a diet add a teaspoon of butter in the drained tagliatelle then mix in the tuna mix and serve. It is yummy, even my son who won't touch anything that looks 'green' eats this as it is just lightly flecked (and he's colour blind which helps lol)
