    Mon: Salmon steaks and veg
    Tue: Prawns in black bean sauce with rice (no rice - stir fry veg for OH)
    Wed: Chilli wraps
    Thur: ??? not decided yet :o
    Fri: turkey curry from freezer
    Sat: Toady Hole
    Sun: pasta bolognaise


    Everything with lots of veg as well as hidden veg where possible ;)

    Away in Cornwall this week (self-catering) so a bit hit n miss but I'm taking with me;
    pizza and garlic doughballs
    prawn curry & rice
    and items for a stuffed pork tenderloin roast on Sunday.
    (& Breakfast stuff)

    Other than that it'll probably be sampling the local fishy delights! :grin:

    I am getting a proper veg box this week so I worked this out by listing what veg I have and am expecting on Monday and went from there. During the week, on days with a W I will be working at the office and on H days I work at home (teaching has just finished for the year, and soon most days will be H days).

    Saturday - lunch - Baked beans and cheese on toast
    Saturday - dinner - Biryani, potato & cauliflower in a slightly spicy coconut sauce, tandoori chicken drumsticks, naan bread
    Sunday - lunch - Leftover drumsticks/scotch eggs, salad, Cheese toastie or soup for DD
    Sunday - dinner - Vegetarian lasagne, lambs lettuce salad (use silverbeet, onions, carrots, peppers, celery in sauce, also the frozen tomato sauce and some frozen lasagne sheets, mozzarella on top) [cook beetroot while oven on]
    Monday (W) - lunch - salad & scotch egg to work, nuts for snack, fruit
    Monday - dinner - Fennel gratin, jersey royals, poached egg, green beans
    Tuesday (H) - lunch - Smoked mackerel , beetroot and lambs lettuce salad
    Tuesday - dinner - Root veg & bean stew, baked potato (veg box recipes – uses kohl rabi & various other things) [cook extra baked potatoes while oven on]
    Wednesday (H) - lunch - Smoked mackerel, beetroot & lambs lettuce salad
    Wednesday dinner - Stuffed baked potatoes (leeks, cheese), anchovy spring greens
    Thursday (W) - lunch - salmon & cucumber salad sandwich, nuts for snack, fruit
    Thusday - dinner - Pasta with walnuts & mascarpone cheese, salad with pepper, beans & cucumber
    Friday (W) - lunch - ham sandwich, nuts for snack, fruit
    Friday dinner - Fish fingers, beans & chips

    Ok, here's what's going on in the Frugalswan house!

    Saturday: Chicken Fajitas
    Sunday: Curry, with wild rice
    Monday: Lasagne from freezer, possibly garlic bread but definitely salad!
    Tuesday: At Mum's
    Wednesday: OH Out, so something quick - possibly Spanish Omelette
    Thursday: Spaghetti Bolognese
    Friday: Mixed Grill Kebabs with Salad (just thinking of taking 1 chicken breast, 2 sausages, 1 piece of steak and 1 piece of gammon and cutting it into thick chunks on skewers - should be nice)
    Saturday - we're out, so something quick (probably a pizza)
    Sunday - something restorative, so possibly Rogan Josh with naan and rice

  • Saturday - Soup (boiled a gammon and used the stock, with bits of meat, carrot, cabbage and potato added to it)

    Sunday - Sliced Gammon with roast potatoes and veg

    Monday - Gammon and Leek Macaroni, all cooked in stock

    Tuesday - Minted Lamb Chops with mash and veg

    Wednesday - Spanish Chickpea stew with belly pork

    Thursday - Swedish meatballs in cream sauce with spagetti (meatballs not HM)

    Friday - HM chicken curry

    Breakfast is Jordans muesli (bargain from poundland!)
    Lunches consist of marmite or egg sandwiches and various snack items that i've bought from approved foods.

    That's why museli has appreared on my menu this week :rotfl: It is very delicious I have to say - lots of bits of coconut, nuts, fruit etc. I can't make it for £1 in all honesty.

    I'm actually ready on time this week so will join in, havent been about for a couple of weeks as ive been soo busy however i can say i have sort of been meal planning although i have resorted to take aways a couple of times which is not MSE so need to get strictly back on the wagon.

    heres whats going on the table in the pretz's household

    Scrambled egg with smoked mackerel and toast
    dinner
    Toulouse sausage and butterbean casserole with boiled potatoes and green beans.

    Tuesday
    lunch
    Cheese leek and potato tortilla
    dinner
    Chilli con carne with rice/baked potato and salad

    Wednesday
    lunch
    Cheese ploughmans
    dinner
    Potato dauphinois, with roast pork and broccoli

    Thursday
    lunch
    Bacon omelette and salad
    dinner
    Corned beef hash with baked beans (if everyones home if not then beans on toast for me)


    Friday
    lunch
    Huevos rancheros
    dinner
    Fish and chips with mushy peas


    Saturday
    lunch
    Egg mayonnaise salad sandwich
    dinner
    Enchiladas and wedges


    Breakfasts are cereal, toast, fruit, yoghurt,tea/fruit juice
    Snacks if wanted are fruit, yoghurts, cucumber, cherry tomatoes

    To poach a chicken; place it in a large pan with some stock veg (carrot, celery, onion) and add enough water to completely cover. Bring to the boil, then turn down to simmer. Cook gently for about 1.5 hrs, or until it is cooked through ;)

    The broth and any left over chicken can be used to make risotto/soup/etc :cool: HTH

  • My week runs from Sunday - Saturday, so here's my upcoming plan:

    Sun 26th - piquant steak with sweet potato chips
    Mon 27th - baked potato with HM chilli
    Tue 28th - mushroom & red wine pasta
    Wed 29th - HM turkey casserole with peas, carrots and mashed potato
    Thu 30th - chicken salad
    Fri 1st - Home for the weekend :)

    Breakfasts - still got loads of cereal in the flat, so a bowl of that with a banana.

    Lunches - cheese, boiled egg or tuna on either a sandwich, salad or baked potato and a bag of sunbites crisps

    Snacks - Carrots/apples, some easter eggs that haven't quite been eaten yet, and HM brownies, maybe make a banana bread with all the bananas I seem to have.

    Also have in some pineapple so may make up a big fruit salad for desserts. Yum. The good weather is clearly affecting my food choices! :j
