Shallots galore

I picked up half a dozen bags of shallots in Sainsbury's last night which had been reduced from £1.55 to just 10p
Cor, I love a bargain.
I'd really like to make some caramelized shallot chutney, and thought it would be easy enough to find a good recipe online .... but I have been googling for the past two hours and haven't really come up with anything (many of the recipes make relishes which only last a week!)
Does anyone have a favourite recipe for caramelized shallot (or onion) chutney/relish/confit/marmalade which they could kindly share with me?

My husband makes the best red onion marmalade. He is not at home so I cannot ask him the quantities. I do know the ingredients
red onions or shallots finely sliced
olive oil
balsamic vinegar
spoon brown sugar.
Chop and fry the onions in the oil until very soft but not browned. Add the balsamic vinegar and brown sugar and cook on a low heat until cooked, dark and sticky. This usually takes about one hour.
Pour into sterilised jars, we keep ours in the fridge.0 -
Looking for some inspiration, I bought a sack of pickling onions but it turns out they're a sack of shallots :mad:
So I've pickled half of them but I prefer to use pickling onions so any ideas on what I can do with the remaining half sack of shallots? Does anyone have any nice chutney etc. recipes?You laugh because I'm different - I laugh because you're all the same0 -

I use shallots in pretty much everyway I use onions. I don't think there is such thing as too many
, and they should last a little while.

I do something very like that but with scone dough not puff pastry. Its really ribsticking cold weather food.0 -
Use them as you would onions
I make onion soup when I have lots.
