Can you have two policies?

Hi there,
I wonder if someone could give me advice please. I am currently a learner driver. My dad has purchased a new car and is offering me his old one at a very low price. While this is fantastic my problem is insurance.
The best deal I can find online is around £1100 as a learner driver. If my mother was to insure the car in her name and have me as a named driver the cost goes down to £249.
My question is can you be the policy holder on more than one vehicle? My mum is happy to help out but doesn't think she can hold two policies (one for her own car obviously). I'm not sure what the rules/ law is regarding this.
I'd like to hear your advice and opinions please, as I am clueless!
