    any of the campbells soups are good as quick sauces. Tomato is really good with chicken :)

    I usually do roast chicken one day, chicken chips peas and gravy the next, then use carcass/scraps for hearty soup for the third (or you could make the stock and freeze it if you're sick of the sight of chicken!!)

    Cook some penne pasta, take the meat off the chicken and chop up, sweat an onion in butter, then put the cooked pasta, chicken and onion and a tin of Campbells chicken soup in with just a little water, cover with brown breadcrumbs, sprinkle the bread crumbs with grated parmesan and paprika pepper and bake in the oven reg 5 for 45 minutes until the top is brown and crispy and the chicken mixture is bubbling, serve with jacket spuds and baked tomatoes, these can be cooked in the oven at the same time as the chicken and pasta gratin, I put the spuds and tomatoes in about an hour before I need to serve supper and then put the chicken dish on a lower shelf after about 15 minutes.

    I made stir fry out of my chicken the other night: onion, sweetcorn, chicken, spices fried up then add water, gravy granules, herbs, eat with pasta.

    Tonight I made risotto using two green peppers (reduced to 5p each at Tesco) an onion and some chicken, fried gently, add rice, then add water, herbs, gravy granules and cook down for ten minutes.

    Rubber chicken was on my menu planner for this week. We had roast chicken on Sunday, Monday was chicken in white sauce with pasta, (I added mushrooms because I love them but you could substitute the mushrooms with any vegetables you have to hand) and Tuesday was chicken curry,rice and naan bread. If the chicken is running low on curry night you can add some cubes of potato to it to bulk it out.

    I have roast chicken first day, then either a stir-fry, chicken pie (the easiest, as mentioned, is with campbells soup - chicken in white wine is lovely) a cheaper way is to make a white sauce & add whatever herbs/flavourings you fancy (experiment!!!) Then top with mashed potato or a mixture of breadcrumbs & grated cheese.
    Sometimes I make a chicken curry, or chicken with pasta - or serve the chicken cold with jacket potatoes & vegetables. Last Monday we had chicken curry with jacket potatoes.
    The third day is soup, made with stock from the chicken carcase. Often I will put the carcase in the slow cooker Sunday night & prepare the stock on Monday, then it can be refrigerated (or frozen if I don't fancy having soup quite so soon)

    I'd cook the chicken in the slow cooker, dismember it and save the stock.

    Then I'd make :

    Chicken & mushroom pie .. making a gravy to go in the pie with some of the stock.

    Savoury chicken rice .. using the rest of the stock to cook the rice and veg in, then adding the chicken at the last minute to heat it through.

    Chicken and something quiche - the something depends on what's in the cupboards or freezer!

    Mix the chicken with stuffing [making stuffing first so it's absorbed the liquid] and then make into burgers[ this is what I did with my left over turkey at Chrimbo!]

    Roast followed by pasta bake followed by cold with salad/veggies followed by pie followed by stir-fry followed by chicken supreme pancakes.........I can bulk out a chicken forever 'cos it goes with just about every veggie available!
