    RISSOLES

    500g lean minced beef
1 grated or very finely chopped onion
1 pack sage and onion stuffing (or make your own!)
    1 large egg
    1 crushed clove garlic
    salt/pepper to taste

Mix all of the above together in a big bowl, when mixed make into small patties (like mini burgers) the mix should make 8 ish. Dip in flour to seal and shallow Fry until golden brown and sealed, should take around 10 mins on a medium heat.
I serve them with mash and peas.

    ooh just found this

sounds quite yummy and dead cheap to make too

lentil loaf - "it was one of the first ever things I tried when I became veggie. Amounts are approximate, because I never measure anything - I'm a 'chuck it in the pot and see' kind of cook. "

Put 200g red lentils in a big pan with 1 veg stock cube and 5 - 6 bay leaves. Bring to the boil, then boil quite vigorously until it reduces into a thick 'paste'. This will take about 20 - 30 mins. Add more water if it starts to boil dry.

Take out the bay leaves and add 200g grated cheddar, 2 - 3 tbsp tomato puree, 1 egg, herbs of your choice, salt + pepper. Line a loaf tin with baking parchment and pour in the mixture. Bake in the oven at about 180C until a skewer comes out clean when poked into the centre (about 30 mins, but you'll need to check).

Let it cool before trying to turn out of the tin - the egg will help the mixture to set. This is lovely hot with roast spuds and gravy etc, or cold with salad.

Well think you are doing really well already, I was spending double what you are when I first found the site, we are a family of 5 and a dog.. children aged 14, 4 and 5. I spend about the same as you now and a lot of that is reducing the amount spent on cleaning products and toiletries from the tips on the site. investing in a breadmaker and a slow cooker have also helped.

Yesterday I made a vege stew for the kids in the slow cooker, never made before but used loads of veg (not onion everyone but me hates it, lol) added half a pack of stew and soup mix which I presoaked.

Added some hm chicken stock and put it in sc on low for the day.

My kids, who used to hate all veg etc. loved it. Even asked for seconds. Because slow cooker was on all day virtually all liquid absorbed.

    Thanks for all that.

Have made a meal plan for the next two weeks, it`s alot plainer tham what me and hubbie eat, but we all have to start somewhere.

I will also be adding some of the fab menu`s here but no point running before we can walk as they say.

1st meal is sausage, mash and peas plus bread and butter Can hear you all say what is wwrong with that, but oldest does not like mash or peas-unless they are frozen. So looks like he will be habving sauasage and bread and butter.

Will let you know about the tears.
    April Grocery challange £175

    Spent week 1 £29.90
    week 2 £62.64, TOTAL £92.54
