Enough for 4 persons served with veg.
1 onion chopped
350g lean mince
1/4 pint beef stock (i use veg stock)
227g chopped toms (i use full tin)
425g Baked beans
2 teaspoons worestershire sause
1 teaspoon mixed herbs
100g dried pasta twists (use a few of handfulls to pad out more)
salt and black pepper
Dry fry onion and mince, add everything else and bring to boil then cover and simmer gently for 20 mins.
mince and macaroni bake
1 onion, chopped
1/2 lb mushrooms, chopped
2 tbsp oil
1lb mince (any)
14oz can tomatoes
2tbsp tomato puree
1 oxo cube, crumbled into 1/4 pt boiling water
1tsp dried mixed herbs
salt and pepper
8oz macaroni
packet cheese sauce, cooked as per instructions
250g natural yoghurt
2 eggs
8 tbsp parmesan
1) Preheat oven to 180/350/gas 4
2) Fry onion and mushrooms in oil till softened, add mince and cook on medium heat till just about brown.
3) Add tomatoes, tomatoe puree, oxo cube mixture,herbs and salt and pepper to taste, and bring to boil. Lower heat and simmer for 30 mins, stirring occasionally until sauce has thickened.
4) Meanwhile cook macaroni as per instructions, drain and mix with cheese sauce mixture and 2tbsp of parmesan.
5) Beat together yoghurt, eggs and remaining parmesan.
6) Place meat mixture into casserole dish, followed by pasta mix and finally yoghurt mixture, bake for 30 minutes.
Serve with a side salad and garlic bread!
CHICKEN CHEESE BAKE
Saute diced onion and garlic in olive oil. After a while Add two sliced chicken breasts and sautee until chicken is cooked.
Add one can of chopped tomatoes and 1 large teaspoon sundried tomato paste, plus a handful of torn basil leaves.
Cook for a bit...
Stir in half a packet of low fat soft cheese with garlic and herbs.
Plonk all into an oven proof dish.
Whack some various cheeses on top (I used feta, blue and gruyere because that's what I had in my cheese box).
Bake or grill until cheese is bubbly

the soup is sooooooooooo good
even my v fussy 3 yr old will eat it

we have same situation - girls have packed lunch at school (school dinners not available in our school!) and we eat around 4pm
Today we have had HM chicken sausage rolls with beans and baked potatoes.

I do baked potatoes quite a bit as can leave in oven on auto and just grate cheese or mix up some tuna/sweetcorn etc when you get in.
HM Pizza is good - I use delia's recipe using just plain flour and works great for us (we like thin, crispy bases)
Also make chicken or meat pulao - just boil up the chicken or meat the evening before or in morning if you are organised enough. Leave rice to soak (can use unsoaked rice no prob. just need to use more stock/water) and then finish off when you get in - takes about 1/2 hour! Even less if you fry your onions in big batch and leave in fridge covered in oil. Girls like it plain with salad and yoghurt. Me and OH have ours with curry and pickles etc

Quantities are small as hubby likes to eat freshly made (but will eat frozen if pushed!) - try and see for yourself. The technique is the important thing - you can then adapt to suit your own tastes and cook larger quantities and freeze.
Of course we often have muffins for breakfast, lunch and tea! If you are organised - weigh out ingredients night before - wet and dry in separate containers and just mix and bake when you are ready!
I never have any left over regardless of the quantity I bake - (record is 96 for summer fair and still none left over!)

and we are huuuge muffin lovers in this house savoury,sweet,whatever time of day doesnt matter lol

I made some HM chicken strips the other day, simple, quick and my kids loved them, told me to never buy shop bought again.
Heres what I did, 1 chicken breast, cut into strips, dip in beaten egg, dip in bowl of plain flower, seasoned with salt & pepper, the whizz up a slice of bread, any bread will do I used SP, seaosned with a bit of paprika and garlic salt, fried on both sides to crisp the coating and then baked in the oven for about 10-15 mins depending on how thick your chicken is, serve with mini corn on the cob and HM wedges.

Potato, baked bean and spinach pie- "Even the non-spinach loving males in our house wolf this down! Make a cheese sauce. Add cooked, chopped spinach (I tend to use defrosted, drained frozen, which makes it a good storecupboard standby) and put in bottom of ovenproof dish. Add a tin or 2 of baked beans on that and then top with mashed potato. Sprinkle with cheese and bake at 180 until golden and bubbling. I do variations on this- jacket potaoes with spinach and baked benas mixed together, topped with grated cheese and Lasagne with spinach in cheese sauce and baked beans between the pasta. You could do canneloni (Sp?!) in the same way, or use pancakes instead of the pasta in either recipe"0 -
Store cupboard fish pie (serves 4)
Filling
2 tins lidls boneless sardines (49p a tin) in olive oil
3 slices stale bread (add more if you need to bulk it out) crumbled into bread crumbs
2 tablespoons creamed horseradish
vinegar and black pepper to taste
approx 2 oz margarine (I use sunflower PURE)
Leftover mashed potato
Method
Put sardines including oilve oil in bowl and mash. Add breadcrumbs, horseradish and marg and mix together. add pepper and vinegar to taste.
Put into cooking dish
Layer mashed potato on top and pop into oven (gas 6) for approx 15 mins or until top of potato pie is golden brown
Serve with whatever frozen veggies you have left.
This is a lovely recipe for "skint" weeks, esp as you can add more breadcrumbs if you need to stretch it an extra portion or two. A great way of using up yesterday's mash too.0 -
Bobotie
Tear 2 slices of bread (specified white, but I used wholemeal) into pieces and soak in 150ml milk.
Fry 1 chopped onion and 1 chopped/crushed clove garlic over a low heat for 5 mins until soft.
Add 450g (1lb) minced beef and brown.
Remove from heat and add 1 tsp mild curry powder, 1/2 tsp chilli powder. 2 tbsp lemon juice and seasoning.
Stir in 55g/2oz raisins and the same each of flaked almonds and finely chopped dried apricots then the soaked bread and milk.
Spoon into greased ovenproof dish.
Whisk together 2 eggs and another 150ml milk. bake in preheated oven- 180 C/GM 4/350 F- for 45-50 mins until topping set and golden.
I served it with rice.
kids seem to like the sweetness of the dried fruit in it0 -
