    I sometimes make them but when I am short of time or need to cheat (like today) I make regular pancakes with a few herbs added into the batter and use them to fill and roll. I usually make 3 or 4 dozen (about 5 pts of batter) and freeze what I don't need to use straight away. Tonight we have left-over chilli and salad to fill them with. HTH

    I make mine with maize flour, and water. A lot of the recipes you find say use white vegetable shortening, and plain flour.
    Most people overlook opportunity as it comes dressed in overalls, and looks like hard work.

    I used the recipe in Hugh fearnley Whittingstalls Family Cookbook and it was fab. So simple and cheap:

    Makes 8 -

    250g plain flour (plus extra for rolling out)
    1 tsp Salt
    1 tbsp olive or sunflower oil
    150ml warm water

    Sift flour into mixing bowl with salt. Put oil in jug of the warm water then pour liqui over flour stirring well, eventually using your hands. Knead for about 5 mins. Cover dough and let rest for 15 mins.

    Divide dough into 8 pieces, and then roll out each into a flat circle (ahem - or whatever shape you can manage!!). Get frying pan really hot (no oil) then turn heat down med-low. Put rolled out flatbread on pan for about 30 seconds to 1 minute. Turn over and do other side. easy peasy.

    Although has to be said does take some time. I did 2 lots one time and froze half. But tbh they are so yummy and cheap I don't mind doing them.

    When you freeze them, how do you stop them sticking together? I once tried to use greaseproof paper to keep some meat slices separate but it all stuck together :(

    I usually find you can just gently lift the wraps off each other,especially if you use a palette knife or similar.

    Baking parchment between each one would be best. Cheapest place I have found for baking paper roll is Lidl.

    If you've an Asda nearby, it could be worth popping in. I was there yesterday and they are selling the flour wraps (i.e. not the corn ones) for 50p. :D Old El Paso ones are £1.50+, so well worth freezing a few packs!

    The River Cottage Family Cookbook recipe is fab, I use plain wholemeal flour and they are just as delicious. It is a bit time consuming, there are six of us so I double up the recipe but there is no way I would go back to shop bought after making these (the shop bought ones tend to give me indegestion - no problem with homemade - and cheap to make)

    My friends make roti which is a flat bread and similar, if a little bit thicker. Also chapattis, you get a special wooden board to roll them out on.
    If you can get chapatti flour use that otherwise half white and half wholemeal;)
