Ive just done a food hygeine course and was told the reason for this is...It raises the temperature of the fridge causing bacteria to reproduce and also particles of the food/bacteria float around in the steam from the food and contaminate other food in the fridge. They did say however if you have a "blast" chiller fridge you can put hot food in as it will cool it down straight away. I dont even know what a blast chiller is though!

Well I don't put hot food in the fridge, because I thought it raised the temperature.
That said I do keep a check and as soon as its cold to the touch, chicken breast for example, no longer than 3/4 of an hour before I put them in the fridge. Then these eatern cold no longer than 24 hrs after.
I beleive I read somewhere that 1 hour was the longest.
