    Bun when I do my chicken curry I do the following I use raw chicken but as you have left over lamb I would do the following. Cook Onion in a large pan with a bit of oil, add in other veg and stir around for a couple of mins. Then add 3 tablespoons of mild curry powder. I normally use 1-2 of Medium curry and 1-2 of garam masala, stir around until all the veg is covered in the powder. Add a tin of tomatoes and stock cube (whatever you want, lamb or veg) made up to around half a pint (you can always add more water if needed), season and bring to boil. Chuck it all in the slow cooker and then add the lamb around hour before you want to eat so that it gets a good cooking and gets hot.

    Its the easiest and low fat curry around. If you do only vegetables there is practically no calories so means you can have rice, popadoms etc and not feel guilty!
