What are you making and baking for Easter??

Hi everyone:easter:
Hope you are all good and preparing for Easter.

I have made hot cross buns and choc nests so far.
Please give me more inspiration by telling me what you are making and baking????

    Happy easter all.
    I think I may make some hot cross buns too.
    If nothing else the house will smell lovely.
    Penelope penguin,my youngest daughter loves marzipan too.She's 32 now but every birthday since she was little she has had to have a 1LB of marzipan with her birthday presents.She then eats half of it for her breakfast,she's done this every year since I can remember.We all find it disgusting but she maintains it's her "birthday treat" she has the other half later in the day.
    I can't just can't see the attraction myself.

    i have the family coming to tea on easter sunday and this some of what i will be making....
    hm bread rolls
    hm quiche
    hm trifle
    hm potato salad
    easter nests
    cold roast beef
    hm onion bajhis
    and i will buy in the rest of the salady bits....
    mmmm getting hungry now!!!!!!!!!
    and just put it on the table so everyone can help themselves and i can sit down and drink my mothers` day pressie of a large botle of white vino..hic hic

    Planning on a Lemon Drizzle Cake, Victoria Sponge, Fruit Scones, Fairy Cakes with lemon icing and lemon/orange slices on top and Melting Moments.


    Looking for recipes/ideas for home-made pasta salads (like the ones you get in supermarket salad bars) - I've got mayo, soured cream, natural yoghourt and pack of passata - anybody able to help me please?

    (the quantites for the topping are ridiculous - 300gr of chocolate?? That's three bars!!!I used 150, adjusted everything accordingly, and it was still too much - I think you'd get away with 100gr, especially if, like me, you're not faffing around with the egg/disciple things on the top - I just put mini eggs on top of it; would be just as nice with a few chick decorations on it!). It was very easy to do, as it uses veg oil as the fat, rather than butter, so no creaming in required. The sneaky slice I've had so far seemed tasty - light, chocolatey, almost like a truffle mix in itself! Will let you know the official verdict once the tasting panel's had a go at it later this weekend!:rotfl:

    bog standard tuna pasta salad goes down well in our house....
    passata could used as a base for a salsa dip
    waldorf salad which i think is apple and walnut and celery based.....
    raita dip yoghurt and mint sauce and cucumber and make some hm onion bajhis...
    couscous mixed with pepper and chopped onion.....
    cold rice salad.....
    mmmmm i think i may open my own deli bar.....

    I've made a simnel cake for the first time this year. I've only done it because I massively overbought marzipan back in September when it was my Gran's 100th and I was making her a cake. It keeps forever;) Simnel cake is really easy if you've made Christmas cake before. I couldn't resist adding some alcohol (hm orange shrub) and swapping the fruit about a bit -no cherries so used apricots instead. I used the recipe in Mary Berry's Ultimate Cake Book.

    I'm also making hot cross buns today. I made the dough yesterday and put it in the fridge, it is just coming to room temp now. Recipe from Nigella's Feast.

    Chocolatewise I'm making a big batch of chocolate biscuit cake -chocolate, bashed up biscuits (for which I had to buy biscuits-something I never do_pale_:D) I'm using digestives or gingernuts, dried fruit and possibly nuts. This is based on rocky road from Nigella Express. I might do one batch with marshmallows_pale_ for the kids and one with fruit for me and OH.

    I make a tuna and pasta salad that is loved by my kids. i just cook pasta shapes, drain it , mix tuna with mayonnaise , season and mix the lot the together. Sometimes i add tinned sweet corn sometimes not. you can do it with rice as well. You could also add cherry tomatoes and some pine nuts ???
    Other salads that i do are mixed green leaves and add croutons and salad dressing. You can add bacon bits, hard boiled eggs, chopped fried potatoes, croutons, tomatoes.grated carrot, anything you fancy..

    Buns are lovely but the crosses a disaster. Nigella tells you to indent crosses with back of a knife and then dribble a flour-water-sugar paste in the indents. My paste was too thick to dribble so I added more water. Result- large splodges rather than crosses. Still, they taste good;)
