Can you do this with the sandwich meats you buy from the butchers?

Just check with your butcher to make sure it's not been frozen before, if not then it should be fine.
  • I ignore the labels! I freeze anything on offer or late use by date, beef slices, polony, potted beef, ham, spam, corned beef - the whole works. I think we are too cautious nowadays. As previously mentioned I'm not dead yet and cannot remember the last time I had to do "the Egyptian two step" either. The worst thing that happens in almost all cases is that the food degrades because of cell breakdown due to ice formation.

  • i freeze sandwich meats all the time, but i make a loaf of bread up into sandwiches for dd pack lunches every other sunday, and freeze them individually wrapped, i just take one out night before and its fine by lunctime(in warmer weather i take them out in the morning). saves a lot of messing every morning.

i quite agree with you there Mr P!

we used to get kippers reduced all the time and they always say not suitable for home freezing but i can tell you they are quite suitable indeed!

i find the only things that don't freeze well are things with a lot of oil in them (like dips) because the oil seperates from the rest of the product and nothing on earth seems to make it go back the way it was before

i freeze all meats and cheeses we buy on clearance (except soft cheeses, we just eat those right away), butter, wine etc

dairy sometimes needs to change it's form before you can freeze it so cream needs to be whipped then frozen, yogurt can be made into ice lollies but if you're wanting to use like fresh cream you'll be sadly disappointed

overall my freezing food has been quite successful, despite what the package says ;)

My freezing failures are only Bacon (OK short term) Fully cooked Jacket Spuds (turned to mush) Soft fruit (Lost texture) Big lumps of cheese (Crumbly) Cream (Just won't work)

Now any cream gets turned into butter and frozen, cheese gets cut up or grated, Jackets are 3/4 cooked and bacon is pre cooked :D My biggest battle is firstly freezer burn and secondly identifying the "mystery meat" in the bottom of the freezer???? (Dough and Chicken look about the same frozen )

    N.B. Mozarella freezes really well.
