Cheap deal Last Minute deal for Easter?

I'm looking for a cheap holiday during the Easter school holiday period for my daughter (17 years) and myself.
My budget is 250 pounds but I wanted at least a 3* hotel (not allocated on arrival), somewhere warm and near the beach.
Preferences would be Tunisia, Canary islands, southern Spain, Morrocco, or Turkey.
I've been looking around, and everytime I see something suitable, by the time it is costed, the price jumps up by another 100 quid!
Usually I would book the flight and hotels separately to get a better deal, but the flights for this period are just so expensive!!
Anyone seen anything suitable that's still available?
Departure dates: 1st - 13 April for 1 week
Departure airport: London Gatwick or Heathrow.
