Biona Rye bread is lovely. It's a good alternative to 'normal' bread. Tesco sell it in their wholefood section. I like their Freefrom pittas too, if they are well warmed up in the toaster first and stuffed with salad0

How much lemon juice do I use to curdle the milk? Would it just be a tablespoon full? I bought some breadflour today to try out.

Hope that helps.A little nonsense now and then is relished by the wisest men

I made soda bread last night with soya milk n a splash of lemon juice. It was very heavy - dont know what soda breads usually like - but it WAS bread!
I don't know about the rye bread, will have to have a look, but was looking at the 'freefrom' range in Morrisons and all the bread had something in I couldn't have. Pitta has yeast, which I never would have thought before. Doing well though.Second purse £101/100

Hi Esther,
just wrote a long reply and then got thrown out somehow, so here is just briefly.
I also have multiple food and environmental allergies and struggle too with sourcing and cooking foodstuffs I can tolerate.
Am now on an EPD injection course, www.epd.org.uk, this is a non profit link that I've just googled, not to my practitioner, but I had had years of cooking "without" and stodgy "bread" efforts, and my allergies are just gettinh worse all the time, so thiss is what I am doing now. Have also ME, which doesn't help, henc e this very short post, brain frazzled!!!
Hope this helps

I would highily recommend the cooking without book- it has great tips and recipes.
Definately have a look on the vegan forum as there are lots of vegan recipes you can eat.
Try ORGRAN products which are wheat ,egg, gluten free etc. They make a lot of flours, pastas, baking products ,pizza bases, cakes and egg replacer.
You can make cakes etc using normal recipes but substitute with egg replacer.
Goodness direct sell a great amount of products -which here gives you a great idea of what is available -that are suitable for you , and I find health food shops and sainsburys are good too.
Substitute normal flour for rice flour/gram flour/soya flour/potato flour.
milk for rice milk/oat milk/almong milk or soya.
You can eat more rice /polenta/quinoa instead of pasta .

I am intolerant of cow's milk but it has proved to be the fat not lactose intolerance. DB is also intolerant of wheat products. I am confused as to why goat's milk is not OK and have you considered sheep's milk products?
My own finding after about 15 years of this that
1. Fermented milk is much less problematic than ordinary milk.
2. Milk used in baking and cooking is less problematic than milk or milk problematic (particulalry if low fat it used.
3. Factory baked breads are problematic but breads made using very slow rises (overnight say) allow the yeast to process properly and are better tolerated.
I know about the stomach pains and the watery stools but it is the inability to breath that keeps me on track. If you've have not made a mistake, you've made nothing0 -
Have you been given the option of Colofac? It is a treatment for IBS but I have Celiac and Lactose problems but these pills are amazing. You take them 20 mins before meals and they stop the stomach cramps that follow after eating foods you are sensitive to. I have been able to eat cheese for the first time in 2 years!Curating a life based on mindfulness, intentional spending and saving.0

That sounds good, TigerLily.
And thanks for the tip about slow risen bread RAS
Have just noticed that Ryvita is just rye and salt. No yeast or wheat.0 -
I have just logged in for the first time in ages as I've been on holiday and lots of other things going on. Thanks for everyones suggestions. I've tried colofac and many other IBS tablets from Dr and nothing worked. I'm coping okay with replacing dodgy foods and haven't starved yet - six weeks now. To be honest, I haven't had time to look up recipes or try out baking because I've been so busy but I am looking forward to going through all the suggestions again and trying new things when I get some time. I really do appreciate everyones help and good wishes.
