Thanks for the thread :) This week we are having (as from last friday):

Breakfasts are porridge (probs not right now as weather too warm really), HM cereal, cornflakes or toast with HM peanut butter/HM jam/HM marmalade or Marmite. All followed by a banana or banana smoothie.

Snacks are carrot, celery, brazil nuts, rice cakes, fresh or dried fruit, or peanut butter cookies. Drinks are water, orange juice, milk, tea or coffee (and wine occasionally for DH )

Mid-Week Lunches will be all over the place as DH off work this week so we will be out and about. They will probably be hummus and olive/cheese sarnies, cheese on toast or scones on request ;)

    Dinners

Fri Chicken and Tomato Pasta with garlic baguette and salad

Sat Picnic Supper of wedges, carrot and celery sticks, lemony olives, hummus, baguette and cream cheese.

Sun Toad in the Hole, peas, broccoli, potatoes and gravy. (HM) Mixed Berry Jam Pud with cream.

Mon Beef Balti with rice or a Beef Pilau with salad and chutney/pickles

Tue Hawaiian Beans with rice and spinach

Wed Thai Green Fish Curry with naans and salad

    Thu Mackerel and Sweetcorn Spaghetti

Puds can be yoghurt, cheese, fresh or dried fruit, semolina, rice pud or vanilla/choc pud.

The vast majority of meat, poultry and dairy is organic.

Hi, can I ask how you make your home made peanut butter. Myself and OH love peanut butter and get through loads of it (shame it is so fatteningicon9.gif).

    Morning all!

Have been toying with a meal plan but not really thought about it too much so this thread is my incentive to get organised.

Sunday - Sausage, mash, peas and gravy (meat for OH, quorn for me)
Monday - chicken curry from the freezer for OH, pasta and fresh pesto for me
Tuesday - OH playing footie (no big meal), jacket potato, cheese and beans for me
Wednesday - beef chilli for OH, veggie curry for me or garlic kiev and salad
Thursday - tuna pasta bake for the both of us
Friday - not sure as we may be out for the day

Not particularly inspiring but it'll have to do.

    Good luck to everyone else.

Hi Catkins :) I just whiz up a pack of peanuts in the food processor, adding a drop of oil bit by bit as I go, until it all comes together to a spreadable consistency. I checked the salt content on the cheap peanuts and compared to the ready made peanut butter - can't remember precise content of each but there wasn't much difference. You can always use unsalted ones instead if you prefer tho ;)

    whats that? it sounds lovely

It goes like this: (serves 4 or 5)

Chop 2 medium onions and gently fry to soften in 1 tbsp olive oil. ( I do this in a wok because you will need quite a lot of space when you add the peppers)
When the onions are soft, add 6 to 8 medium size peppers: red, green, yellow mix is nice. They should be deseeded and thinly sliced. Also add 4 to 5 garlic cloves(chopped), 1 tsp salt, 1.5 tsp cumin, 1 tsp ground coriander, 1 tsp dry mustard, a touch of cayenne (to taste) and grind in some black pepper.
Continue to stir-fry this mixture for another 10 minutes or so, then mix in 2 tbsp of plain flour and cook for another 5 mins.
Next, put it all into a lightly oiled oven dish (I usually make half the quantity for DH and myself, and use the Remoska at this stage).
Mix together in a bowl: 500 ml yoghurt and/or sour cream, 2 to 3 eggs and some chopped fresh coriander. Cover the peppers with this mixture. Finally, lay some thin slices of cheddar or other cheese over the top (optional), and sprinkle with a little paprika.
Then it goes into the oven at 375°F for 40 to 45 mins until, as the recipe says, it is 'firm in the centre and bubbly around the edges'.
Usually we have rice with this, but it goes well with couscous too and yesterday it was tortillas.

    Bon appetit!
