I make teacakes all the time and sometimes I add raisins and a bit of mixed spice to them.I use my basic white bread recipe and adapt it my kneading in the other ingredients at the final kneading. You could also add some mixed peel but my lot dont like it.

I always make my dough in the bread machine and use the pizza dough setting as this does all the mixing and also the first proving the mix only setting does just that and only mix the ingredients together.I bake my teacakes on greased baking trays.Dont line the trays with greaseproof paper as the dough will stick to it and you will have a heck of a job to get the finished teacakes off it.I usually bake mine on Gas Mark 4 for about 15-20 mins or until lovely and golden.By the way I use the shelf in the middle of the oven

I followed the instructions this evenng for pesto pinwheels out of the Panasonic BM book. They were really nice, though I'm not a fan or fresh/doughy bread. Kids and dh had some and have made packup for ds for tomorrow with a lump of mature cheddar in. Very pleased.

I just used the white bread roll (same as loaf) recipe. have used that for finger rolls and burger buns. If you are making teacakes etc it's sometimes nice to enrich the dough with some egg and a bit more sugar, to taste.
