  • I use rice flour in most things - just substitute for S.R. by adding 1tsp (gluten free) baking powder to each 8oz flour.

Any cake recipes that have plain flour and baking powder/bicarb can be a straight swap.

For all cakes there won't be a problem, more difficult to make pastry but roll bteween oiled sheets of cling film.

My cakes always turn out very light and can be treated as any made with wheat. I actually prefer them made with rice flour now and I have no intolerance! (though many close to me do)

    Hello,

I have a bag of rice flour someone has given to me. What can I do with it ? Can I use it as I would 'normal' flour ?

I've had a quick search on the forums but haven't found anything.

    Thanks

    Robson

  • I make gluten free muffins with it.
    1/2 cup milk
    1 banana
    3/4 cup rice flour
    1/4 cup sugar
1/4 tsp spice (cardamom, cinnamon, nutmeg or what you have)
    1/2 tspbaking powder
    1/4 tsp bicarb.
    1 tsp vanilla essence
    1/2 cup dried fruit.

    175C Gas Mk. 4
Mix all the dry ingredients together. Mash banana, mix with milk and vanilla and stir in, spoon into cake cases and cook for 20 minutes ish
They are a bit dry but completely gluten free.

I only know how to cook one indian dish with rice flour. You need three portions of rice flour to one portion of lentil flour and enough water to make a thick batter. Stand for ten minutes and then whisk. These are then cooked like normal pancakes. To make a filling you heat some oil and cook mustard seeds till they pop. Add chopped onion and pototo (abour centimetre cubes for the potato) add about half a teaspoon of tumeric, salt and enough chilli for your tastes. This is tradionally served with a spicy prune sauce (I cheat and buy ready made as the MIL hasn't taught me that yet) and natural yogurt with coconut and chillis added.

Hopefully others will be along soon with additional suggestions.

Rice flour is perfect for Fish batter, 1/2 it with plain flour.

Also it is great for sweet batter such as if you make Banana fritter.

    Hi,

Apart from the fact that it comes from rice I believe a main difference is that it is pretty much gluten free. (white rice has some additives including vitamins which may not be gluten free but i think it still has very little even then).

Given that gluten gives the chewiness in bread , bagels , pizza dough when used eg with wheat flour I think your rice flour will be excellent in batters etc when you want a thin and crispy batter eg tempura or pakoras but you can forget it in breadmaking.
