Thanx guys..I will be trying the recipes out yay :)
  • All my teen DD love oatcakes, - I do buy them now and then - but they can polish off a whole packet between them in a day. They would like to take them for packed lunches. I wondered if I could make them economically at home, and thought this would be the best place to ask the experts ;)- has anyone made them?
No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!

  • I've used the recipe below successfully before. I make them in the oven rather than the griddle method which many recipes suggest.

    4 oz (125g) medium oatmeal
    2 teaspoons melted fat
2 pinches of bicarbonate of soda
    Pinch of salt
    3/4 tablespoons hot water
    Additional oatmeal for kneading

Mix the oatmeal, salt and bicarbonate of soda together before pouring the melted fat into the centre of the mixture. Mix together and add enough water to make into a stiff paste. Cover a surface in oatmeal and turn the mixture onto this. Work quickly as the paste is difficult to work if it cools. Divide into two and roll one half into a ball and knead with hands covered in oatmeal to stop it sticking. Roll out to around quarter inch thickness. Cut with either pastry cutters or I sometimes use an old teacup if I want bigger ones.

Bake at 190c for about half an hour. Should be nice and brown round the edges.

I've used the recipe in Hugh Fearnley Whittingstall's Everyday Food cookbook and found them to be very easy to do and more-ish.
