Audacity is an audio editor program so either record one track at a time or record them all and then select each track and do File Save As for each track.
If you are trying to create MP3 tracks you would be better using a proper ripper program like dBpowerAmp Music Converter which will rip each track and it will fill in individual track details automatically. See here for a tutorial.

check out their website (great product BTW) http://audacity.sourceforge.net/manual-1.2/tutorial_common_ed_3.html0

Or, without using any more software, identify on the wave pattern (in Audacity) where one track ends and the next begins. You can select the part of the sound file by clicking and dragging, then cut and paste it into a new Audacity file. Bob's your uncle!0
