Soggy cake...

im having trouble making a chocolate or strawberry jam sort of cake ... i really want those sort of soggy cake overly moist im blaming it on pregnancy craving but i damn refuse to pay the prices at shop for a cake i know i could probably make at home ... the thing is my cake although they turn out lovely they're drier then i want them ... any ideas please x

    If you want a moist and I mean really moist this apple cake one is fab and so easy.Never had a problem since making it and its so easy.
    8oz S R flour
    1tsp baking powder
    8oz sugar
    2 large eggs
    1/2 tsp almond extract ( optional but worth using)
    5oz butter
    11oz apples ( says cooking but I use any)
    1oz flaked almonds (optional)

    Grease and line an 8" round tin (I use a 9") preheat oven 160/325/Gas 3.
    Peel,core and dice apples.
    Melt butter and mix with sugar.Blend in flour,baking powder,beaten eggs and almond extract until mixture is quite solid. Mix in apples.
    Place in tin and sprinkle almonds on top,if using.
    Bake for 1hour 10 to 1 hour 25.
    I usually check to see if the sides have shrunken from the tin to test if it is ready and lightly press the top. Leave to cool in the tin for 15mins.
    Hope this satisfies the cravings.

    I find that butter produces a moister cake than using margarine. Plus, cakes that have yoghurt or ground almonds in the ingedients as these seem to keep it moist. Also those cooked in the microwave do too. :)

    I know its not chocolate or strawberry cake but lemon drizzle cake is my favourite for a really moist, stick to the roof of your mouth, sort of cake. Yummy!
