Yes, you could do the brisket in the sc - oil and season it first just the same, then pop it in sc with a slug of wine and cook on low for a few hours, or even add the veggies in with it from the start, to cut down on total cooking time, and do the mash separately when it's almost done"An Ye Harm None, Do What Ye Will"
