Lamb leg & other questions

How long can I keep it in the fridge for? I picked up my lamb carcass today and have squeezed most of it in the freezer, but am having leg on sunday-will it do in the fridge til then?(I think that it should but wanted to check :)

(also-was given the kidneys, I can't stand them but OH loves them- we're having grilled chops tonight-can I just stick them under the grill with the chops? and should I marinade them/brush with some kind of mustardy/worcestershire saucey/devilledy type sauce? and how long do they take?:confused::confused:
Chops I grill under high heat for about 3-4mins each side so fat crispy and pink inside-YUM YUM YUM

Oh, and finally-I have a bag full of bones for stock, I have nowhere near enough freezer space for stock, but can I roast the bones when I do the leg and freeze them for stock later, or best to freeze raw and roast and make stock from there? Was thinking could roast the lot of them, freeze them and then just pick out 1 or 2 when I need to make stock? Would that work? :confused:

Sorry for all the questions-got a whole lamb last year, but missed out on all the bones and stuff-this one I was able to just tell butcher exactly what cuts I wanted and how many chops to portion up etc etc-its GREAT :) All I need now is a third freezer to fit a pig in! :D:D

    hi i had a whole lamb recently .
    what i did was i roasted the bones then made the stock which i put in freezer bags and froze the stock i just squeezed this in where i could i also reduced the stock down quite a bit so it is a bit more concentrated .
    i dont know about freezing the bones as i just made the stock straight away .but if the stock is more concentrated this will take up less room than the bones .
    im probably too late now to tell you how to cook the kidneys but i just fried them up in a little oil and pepper .
    if your not sure sure that the leg will keep in the fridge you could always cook it late fri early sat this will then keep till sunday dinner .

    it sjould be ok to roast then freeze them. i wrap them in baking paper and then foil, seems to work
