Close to the centre and pretty cheap where you don't have to bolt down your stuff isn't going to be easy, especially the 'cheap' bit.
My wife and me usually go over there in early February and at that time you can get some cracking deals, but it gets really expensive later on. Last summer when we had to go over there for a few days we stayed in a Hotel called 'SeasonStar' that's about 5 minutes walk from Amsterdam Centraal station. Good basic hotel, extremely helpful staff so it might be worth having a look at that. Wasn't cheap though, but it was the cheapest I could find that also looked reasonable.0 -
I came back from Amsterdam on Monday, stayed in a houseboat. There are a range of accommodations on www.houseboathotel.nl which is where we rented ours from (BK48 if you're interested!!) We stayed by the Rembrandt House and was able to walk to most things from there.

Last time I was in Amsterdam we stayed in a lovely hotel called the Nadia Hotel, it was about 3 mins walk to dam square and on a canal with balconies overlooking it, from what i can remember we paid £50/night for a double room (pretty small rooms tho) with a balcony. The owners were lovely and even gave us free beer on returning every night!

The rooms have been done up a little since the photos were taken.0 -

Good point. The booking at the Seasonstar was around 530 Euros for 3 nights, just to provide a data point.0 -
Try the Dam Rak which is right on Dam Square about 200 yards from train station, its 3 star I think and is fine for a weekend out on the lash0

Hotel Old Nickel

All rooms private but shared showers and toilets.
Hotel Old Quarter

Choice of shared facilities or own shower/toilet obviously this costs more.
I have stayed at the old quarter and it is safe.0
