Fake Redundancy - Unfair Dismissal ???

Both my husband and I were made redundant and due to our job (live in) we also lost our home.

I have now found out, my boss has employed loads of part timers, some working part time through the books and then making up full time hours with cash in hand, to replace us. He has also just offered someone I happen to know a job.

We worked for two years, no contract, never opted out of EU working regulations and often did 60-70 hours a week, had no consultation and I was not offered any other employment, when I know he needs the staff.

Is is worth me filing for unfair dismissal? as I think this was just a fake redundancy, because there were no grounds to fire me, but be wanted to do things differently.

Where do I start? This is so overwhelming, along with both my partner and I looking for jobs, is this worth it?
