Went to a Pampered Chef show yesterday, and she made a really lovely Ham and Brocolli ring. (This looks nothing as nice as the one yesterday, but just to give you and idea)

It was so simple to make, and tasted absolutely gorgeous. The only thing is OH absolutely detests brocoli (and cauliflower). Trying to think of another veg I could use in it instead?
Thanks for any suggestions - and try the ring - you can get the croissant dough in Aldi.

Looks nice, what about peas or mange tout chopped up, they taste good with ham too, personally I'd go with sweetcorn though as pp said.0

"This is the basic recipe but I substitute to suit what I have in the cupboard. Cheddar cheese, pre- cooked sandwich ham and chicken, asparagus for the broccoli, onions instead of the peppers...you name it, it will work!"
sounds good to me, does he not like sparrow grass either?Eat food. Not too much. Mostly plants - Michael Pollan

Leeks, julienned green beans, and chopped Brussels sprouts come to mind!
Looks fantastic. I'll have to try it!0 -
Thanks all for the suggestions. Didn't read that bit about the asparagus on the blog! I think I will try sweetcorn. Actually, I quite fancy it with tuna, sweetcorn and mayo etc..it would be like those french hot filled croissants from that shop I love!!
Also....yesterday she didn't use chicken, she used chopped cooked ham, just the sandwich kind you would get in Asda.
If you google 'pampered chef recipes' you get a few more in a similar vein....this one tasted absolutely amazing. Here's a better pic
The croissant dough is in the Aldi chiller...not frozen. I am not sure how much it is. It is in a blue cardboard cannister/twist out pack. She says you can use puff pastry too, (Asda do that in their chiller dept quite cheaply - but the Aldi one comes in rectangles which split into two into the long thin triangle shapes you need, and are easiest to use so I think I will try that the first time.)
I watched her do it and it was so easy. Chop the ham or chicken, broccoli, onion, peppers etc, grate the cheese, put everything in a bowl, add the dijon and the mayo and lemon juice, mix it well up.
Arrange the dough triangles in a circle like you are making a sun shape - I will use a round pizza tray and baking parchment , she used a baking stone. Don't use water or egg or anything to stick it together. You should have a centre circle about the size of a small saucer. She also pressed it flat with a small rolling pin - but just the bit the filling sits on. Pile on the filling around the edge of the circle, and sort of pile it up high to get it all to fit in - she sort of shaped it 'up' with her hands - then lift up the pointed edges of the dough like hankies and drape them all over. Press dough together and bake it.
Please let me know how you get on if anyone does do it!!
Edit: sorry I have spelled broccoli wrong so many times!!Life.

...just had another thought, I have a jar of Ada mexican enchilada style sauce in the cupboard I have never used - a variation could be to try that instead of the mayo and dijon, with chicken, onions , cheese etc.....Life.
