We originally wanted to get married in Florida until family members threatened to never speak to us again. Our plan was to marry in smart but nice clothes get married early in the morning then spend the rest of the day in Disney World and book a meal at one of the restaurants later.
That way we could tick all the boxes we wanted, a nice wedding for us, a fun day for the kids and still have a nice meal.
We were going to go through a company previously called Crownline as we know someone who had used them and liked them and they specilise in Brits getting married abroad and will arrange everything for you (even a small cake if you like). There new site is http://www.getmarriedinflorida.com/0 -

My hubby and I got married in Gibraltar (registry office but English) and then went down to Costa del Sol for honeymoon. It was great but we did need to spend a few days in Gib to 'get residency'!!

Holiday in scotland and get married in a humanist ceremony while you are here. The marriage is fully legal worldwide so no need for church or even registry office.
You could rent a lovely whitewasher holiday cottage for a week or even 2,I have one in mind,at loch lomond, lots of lovely garden for the boys to play in,stream at bottom of garden, you could be married inside the cottage or in the lovely garden depending on time of year, views of ben lomond and the surrounding area are magnificent.Let me know if you would like a link to the cottage I have in mind."Reaching out to touch the stars dont forget the flowers at your feet".0
