ideas for lunch at home (not packed)

  • How about baked potatoes with various fillings? I often have LOs from the night before on the days I'm at home on my own for lunch.

    Or egg based stuff eg frittata or omelette- also a great way of using any veg lurking in the fridge.

    i make up salads or pasta dishes and leave in fridge or i have my weakness cheese and biscuits but the weather being as it is down here i still love my soup and crackers

    What about making a bigger batch of your dinner the night before to warm up the next day?

    Or you could try a buffet approach and have a little of lots of things on the plate: slice of ham, some cheese, bit of salad, coleslaw, grapes, satsumas, crudites etc etc.

    Or there's the good old standby of soft-boiled eggs and soldiers?

    How about a cold pasta salad. Cold pasta, tuna. finely chopped onion and a little mayo is quick and you could add all sorts of other things like pepper, cheese etc. Or quiche is good too, just bake a couple, portion them and freeze for when you need them or like others have said you could have it for dinner the night before and use up the leftovers.

    Yesterday, I went abound the chip shop. I had battered sausage and chips £2.15. It is a cheeper price at lunchtime.

    Sometimes I make macroni cheese.

    Today it is a toasted sandwich.
    If winter comes, can spring be far behind?
    Spring begins on 21st March.

    I love to have a massive bowl of cous-cous or bulgar wheat salad in my fridge, because you can put almost anything into it - my favourites include (not all together!) feta cheese, cheddar cheese, peppers, onions, mushrooms, olives, sundried toms, cucumber, grapes, roast veg of any kind, chickpeas, beans, leftover meat especially the scraps from a chicken carcass - absolutely anything really! I make a nice dressing usually either a tomato-ey vinagrette or balsamic, or minty sauce for a tabbouleh-type dish. Have it at dinner time on its own or for tea with meat and salad - you can get pretty much your five-a-day in one bowl, and it can be as cheap or expensive as you like!

    :eek: Oh how that made me fancy a cheesy bean n onion toastie. I've not had one for years n still remember the lip burn you got when you were too impatient to wait. George Foreman grills just don't let you have the same amount of variety.

    OP How about a yummy pancake with mushroom filling or cheese and ham croissant warmed in the oven - yum!

    Although if left to my own devices (alas not very often) I tend to eat toast with brown sauce :o
