ideas for lunch at home (not packed)

Hi, We seem to eat the same lunches when at home and I was hoping for a few more ideas - feeling stuck in a rut :o

We often have:
jacket potatoes
beans on toast
omelette/fritata
HM soup
Pasta

OH insists on protein so must include some sort of meat or beans :rolleyes: And I try to get as much veg in the step kids as I can in the course of the weekend ;)

Has anyone got anything slightly more interesting for lunches at home? Cheap too is a bonus of course ;)

I did search but came up with millions of packed lunch ideas...

    Toasted sandwiches? We've recently 'discovered' Toastabags and they are great... I've made tuna and cheese, cheese and salami/pepperoni etc and they've turned out really well

    OH also likes fishfinger sandwiches on a Saturday lunchtime, or a fried egg sandwich...

    That would be fine... but I recently blew up the toaster :o
    Have done them under the grill though so that's a possibility...

    Fishfingers are now on my list....as are hotdogs ;)

    Cheese on toast with extra pizza bits sounds good...

  • Crudites with dips, hummus, kipper or smoked mackeral pate etc

    salad nicoise

    scotch eggs salad ( often find mini scotch eggs reduced and they can be frozen)

    cauliflower cheese

    home made fish cakes (tinned salmon & mash) with hot tomato sauce and or salad

    cheese souffles

    cornish pasties

    avocado and prawns
  • I love cous cous and salmon/ tuna/ ham and salad - very filling!
    So simple, cheap and quick to make... yummy!

    We have pancakes with either a sweet or savoury filling sometimes. DH likes his with sugar & lemon, I like mine sprinkled with grated cheese, rolled up and put under the grill for a few mins. Its lovely served with a salad or just a tomato salad drizzled with olive oil & black pepper.

    We quite often have leftovers for lunch at the weekend. My kids like leftover spag bol or chilli on toast.

    I know its sandwiches again, but a bacon/sausage or egg sandwich is a nice change at the weekend.

    Home made humus is often eaten here on saturday lunchtimes - very easy to make ahead of time then you only have to warm up the pitta bread and add some salad

    Thanks guys.
    Used to do bacon and scrambled egg pitta/baguettes so that's on the list for this weekend (with smoked salmon instead of bacon for me and OH).

    OH has bacon and boiled eggs every day for brekkie ;)

    My attempts at pancakes tend to be hit and miss :o but if I'm feeling in a cooking mood then I might be tempted to do that.

    Sausage sarnies are another thing I've not done for a while...
