Advice on type and bank to use

Hi
I am looking for some advice:

I have volunteered to take care of the financial side of a trip/holiday for a group of people about 20-30 in total.

The holiday will cost a little under £1000, with deposit of £100 being paid in the next fortnight and balance paid the usual 4-6 weeks before the trip (March 2010).

After the initial deposit is paid, I was going to offer a place for people to save up, by giving their money to me.

I will need an account for this to keep it separate from my own finances.

I want people to be able to make their own transfers but if needed they can pass cheques or cash to me and I will transfer in.

There is the possibility that no one will need this service and the account may not be used at all, or only for a small amount, but I have to be prepared for this or a full commitment from all.

Any interest made will be used on the trip for prizes etc, so I would like to maximise.

So, what’s the best account type and from which bank.
Any other advice or potential pitfalls would also be appreciated.

Thanks in advance.
I was going to write the book "Life for Dummies", but felt I was a little overqualified.
