    Also, the 5 chicken breasts - pasta bake or what is best way to get value? make somepasta to go with the chicken and also some salad budget may be stretched tho

    Maybe curry queens curry but i dont have a food processor or blender - getting next week thanks to freecycle .

    Banana Muffins/Cake/loaf

    Put in a large mixing bowl
    10 oz plain flour
    1 tsp baking powder
    1 tsp bicarb
    1/2 tsp salt

    In another bowl mash 3 bananas(the riper,the better)
    Add
    4 oz sugar
    1 egg,beaten with a fork(I never use the egg as dd allergic-you can replace it with 3-4 tbsp of milk)
    2-3 fl oz milk
    3 fl oz vegetable oil or melted butter

    Add the liquid ingredients to the dry and combine thoroughly,BUT be careful not to over-beat,on no account use an electric beater,the mixture should look quite lumpy.

    Line a muffin tin with muffin cases,or grease the cups well and fill about 3/4 of the way up.Bake at 190-200c for about 25 mins.
    If you want to make a cake pour mixture into a greased 1lb loaf tin or a 7 inch round cake tin and bake for about 35 mins.check for doneness with a skewer-if it comes out of the centre of the cake clean it's cooked.
    I usually double up the mixture,so I'm not entirely sure about the tin sizes ,I'm afraid.

    You can obviously add chopped nuts,raisins,dried apricots or choc chips.Some mixed spice is nice too.

    Hi zippychick,

    If you are making an 'ulster fry' for breakfast why don't you impress them with your own homebaked potato bread which is easy to make and so much cheaper than shop bought:



    Mashed potato – I use left over rather than make it specially
    Butter – a good couple of knobs
    A pinch of salt
    Plain flour



    -Warm up the left over mash

    -Add a little salt

    -Add the butter and stir through until completely melted

    -Start to add the flour and mix it into the mash (I use a large metal spoon to start off with, but usually end up using my hands)

    -Continue to add flour until the mix feels like a stiff dough

    -Divide the dough into balls

    -Roll into circles that will fit into your frying pan (about 5mm thick)

    -Cut the circle into quarters

    -Lightly dust both sides with flour

    -Preheat the frying pan (or flat griddle if you have one) to a medium heat

    -Dry fry
    the potato bread (no oil or butter). At this stage you just want to cook the dough rather than fry it.

    -Turn occasionally. It’s ready when it’s beginning to brown in patches.

    -Cool on a wire rack.

    At first just try making one piece at a time so that if the consistency isn’t quite right you can knead more flour into your dough.



    It will keep in the fridge for a couple of days and freezes very well. I normally make it in batches and freeze.

    For variations, add black pepper or chives

    To cook
    : Preheat frying pan to hot, fry in butter and serve immediately.
