I cut my potatos into thick chips, par boil them for about 5 minutes, lay them on a tray, drizzle with oil and bake in the oven. Makes lovely chips and par boiling them makes them more crispy, than doing it from raw, using less oil.

Well, they were a success with ds but not so much with dd1,dd2 wont touch any chips anyway so not too bothered about her. The nice thing is that there are some left so I'm having them for tea with curried lentils and peas.

this is what a friend of mine served as chips, I call them half-baked potatoes. you get the crispy chip bit as well as the fluffy baked potato inside & crispy skin ... lovely :)

scrub medium-sized potatoes, don't peel them
    cut in half lengthways
oil* a baking tray, you can use a lot of oil or as little as a teaspoon
place potatoes cut side down on the tray
bake at 180-200 for 45-60 minutes till crispy underneath & cooked through
serve crispy side up, with salt & pepper (cut open & stuff in some butter too if you're feeling indulgent)

works best with potatoes suited to chipping or roasting

    * it's nice to experiment with different oils, my friend always used cold-pressed sunflower oil
  • Buy McCains oven chips - they do all sorts of different ones.

I remember when i was growing up (in Bolton) we had an old style chip pan & fat. It seems that these days it is only yorkshire folk who use a chip pan (when they are hammered) and burn the kitchen down.

    Oven chips are the future

Correction - home-made oven chips are the answer. Only ingredients are potatoes, oil and, if desired, salt & pepper (compare with the list on the McCain packet). And only a fraction of the cost of McCain :D

I agree....we will have frozen chips on occasion. But that's only when we really can't be bothered. Then OH has to go out to buy some especially. Homemade ones are cheaper, much more healthy and more tasty in my opinion.

  • I use a wok for deep frying as it uses less oil. Also wedges are nice sprinkles with some of the Fajita seasoning you get in the spice ranges - sort of Southern fried wedges

I love the taste of home made chips in the oven but when I can't be bothered we have McCain home fries, they are nice too.

  • We do Slimming Worls chips and they are absolutely gorgeous, wouldn't have chips any other way now.

Chop potatoes, and boil in salted water for a couple of mins.
Drain, and shake to fluff up.
Put into a hot roasting tray, spray with frylight (slimmers) or drizzle with olive oil (skinny people). Liberally season with sea salt and freshly ground black pepper.
Oven gas 6 for about 25 mins, turning occasionally.

    YUMMY!!
