You can use a large sausepan and fill it with no more than 1/3 of oil.

This is what my OH does

    1. cut potato into chip sized peices
    2. put on tray greased with a bit of oil
    3. drizzle oil over the top
    4. sling in the oven
    5. take out and scoff when look crispy.

My Nan's method (god rest her soul) was essentially to cut a potato in half and then fry. Yes in half.....now those were chips.

I like that idea. I will have to give it a go.

I roast chopped vegetables and peppers this way with plenty of garlic.

Cut the chips thin (8mm max), dry them on kitchen paper first, and fry in a deep pan in about 1 cm of corn oil at about 1/2 gas. Fish them out with a slotted spoon, not when they are yellow, but just as they begin to turn light brown. Turn out onto kitchen paper.

You can make excellent 'hand made' potato crisps the same way. You need a very sharp strong non-bendy knife to cut very thin slices from the spud (Desiree are best).

Glad to be of use. We don't have a deep fat fryer....because it is too tempting for him to use. So OH went off and researched an alternative that he could handle. That is what he came up with.

Thanks for your help guys,I knewsomeone would have an answer. I have peeled and cut the spuds, coated in oil and they are now in a hot oven. I know its not the best way to get spuds into kids but mine wont eat them unless they arechips. I have decided that at least if I am the one making them then they are not full of preservatives and other assorted crap. Will post back later with the verdict.

Try making potato wedges by cutting them into wedges with their jackets still on. If they are quite chunky, stick them in the microwave for a couple of minutes. Then coat with paprika and bang in the oven drizzled with oil. The paprika doesn't have a strong taste but don't tell the kids cos it might put them off! My kids love them.
