Leftover Roast Potatoes

Flatmate did a veggy roast dinner last night and then declared he was back on a diet from today onwards. The trouble is he seems to have cooked an entire packet of oven roast potatoes :eek: :eek: and I can't bear to throw them away.

Is there some kind of meal I can turn them into for myself etc? it doesn't have to be veggy.

I also have 2 LO yorkshire puds. Not keen on them but I might be able to turn them into something edible.

    The fridge eats left over roast potatoes in our house. :rotfl: At least I assume it does - if I put any in there the next morning there's just an empty bowl :rotfl::rotfl:

    well usually I do the same but there are so many i think it might be an idea if I can to turn them into a meal to save money and prevent snacking as I am trying to lose weight too.Though I don't need to as much as my flatmate who seems to grow by the day.

    Mmmmm left over roasties! I would slice them and put dots of butter on them then put over any stew based dish and bake like a lancashire hotpot.Or I would chop them up and mix with greens for bubble and squeak.Or I would slice and fry with bacon bits for a hash.Or maybe I would eat them cold before anyone else found them:rotfl:

    How about making some into a soup with vegetable stock and any other veg you have around then blitz.

    Mash them up abit and make some Veggie burgers for you and your Flatmate.(Although from what you say he's not very Flat:rotfl: )

    Hi Reverbie,

    The roast potatoes will re-heat in the oven in about 10 minutes so could be used as an accompiment to your meal tonight? Yorkshire puddings re-heat in about 4-5 minutes and are great filled with meat and/or veggies with gravy as a sort of pie without pastry.

    Yorkshire puddings with warmed jam or syrup. :drool:

    The roast potatoes you could slice and use to top a mince type dish. You could chop them up and make a Spanish omelette.

    Personally I like to slice and fry them. Serve with a fried egg.

    dinner soup

    * Roast potatoes, parsnips
    * Cooked vegetables such as cauliflower, broccoli, carrots, courgettes,
    * Meat stock
    Stocks

    Made from your meat and fish bones.

    Instructions

    1. Put the potatoes and vegetables in a suitably sized pan (one that holds them snugly in the bottom and about halfway up the inside). Cover with stock by about 2cm (go easy, you can always add more to adjust the consistency).
    2. Bring to the boil, then reduce the heat and cook for about 10 minutes or until thoroughly heated through.
    3. Liquidise the soup with a hand-held electric blender. Taste the soup and season. This is one soup that needs plenty of pepper. Serve in mugs or bowls with grated cheese and croutons.
    A little nonsense now and then is relished by the wisest men :cool:
