Anyone have a good chicken recipie/ideas?

Hi all

Just wondered if anyone has any ideas what to make with a smallish whole chicken - rather than the usual roast chicken dinner etc? I've got plenty of ingredients/veg to go with & can use the slow oven.....but bereft of ideas today!

I do have 2 requests though - we don't eat the skin and are trying to lose weight - so not too much cream etc please - although I can sustitute.

    Right... where to start... we have LOADS of recipes.

    To start with there are plenty of recipes in the Cooking section of the MEGA index sticky at the top of Old Style listed under "Chicken and other poultry:" Also listed in the Cooking section are quite a number of websites, many of which allow you to enter a list of your ingredients and then provide recipe choices for you.

    Then we have our own main Old Style Recipe Collection, and then a special Slow Cooker Recipe Collection, and both are indexed to help you find things easily.

    You can find these via my signature any time you see it or...

    ..you can use the Indexed Collections link in the Blue Bar at the top of every page which looks something like this:-

    How about a clear chicken soup?
    - Clean, skin & cut chicken into portions & put in saucepan
    - Fry sliced onions separately & add
    - Add sliced carrots, diced potato & seasoning
    - Fill saucepan with water, boil and then simmer until chicken cooked

    It's simple, filling and warming on cold February days

    Score the chicken pieces and marinate in a mix of grated onion, thick greek yoghurt and tandoori mix. Goes well with plain, fluffy rice.

    Fry up some mushrooms,celery and onions with some smoked bacon.Put into casserole (or slow cooker)add chicken and a tin of chopped tomatoes.Top with new potatoes and bung in oven for a couple of hours.Lovely!
  • Chop into thin strips and whack in a pan with a little oil, lemon jiuce, some pepper and spices and it makes a lovely spicey mix for eaithe fajitas, a light curry with some plain rice or even on noodles! yum!

    or if you have a steamer, put a decent sized chunk in some tinfoil with butter, lem juice and black pepper, and steam in the top section for about 20 mins. Comes out yummy, and great with new potatoes and fresh veg :D
