cakes that keep...

Options
In preparation for the attack of the outlaws, I thought I would make some cake so they can snack [strike]without wreaking my kitchen[/strike] when they want. However, I will be working that week as I couldn't [strike]wouldn't[/strike] take time off. I thought about making a fruit cake (which I think will fail the food wand test :rolleyes: ) but if anyone has any suggestions for cake that will keep in an airtight container for a week without going nasty, I would be sooo grateful. Cake doesn't tend to go cold at home, let alone stale. :o

Can I make drop scones in advance and just warm them up too? I thought that might be an easy breakfast.

I don't have a freezer.

    The ones that I find keep the best are banana bread and ginger loaf cake, if they don't get eaten they last at least a week in a tin

    Ginger cake

    175g (6oz) butter
    175g (6oz) soft brown sugar
    175g (6oz) golden syrup
    200ml (7fl oz) milk
    2 eggs, whisked
    325g (11oz) self-raising flour
    2tsp ground ginger
    1½tsp bicarbonate of soda

    1.[FONT=&quot] [/FONT]Heat oven to Gas 2, 150°C, 300°F.
    2.[FONT=&quot] [/FONT]Grease and line a 2lb loaf tin with baking paper.
    3.[FONT=&quot] [/FONT]Melt butter, sugar and syrup until sugar has dissolved.
    4.[FONT=&quot] [/FONT]Remove from heat and add the milk and blend until smooth, add the eggs and mix in.
    5.[FONT=&quot] [/FONT]Fold in the flour, ginger and bicarbonate of soda, pour into loaf tin.
    6.[FONT=&quot] [/FONT]Bake for 1 hour, then cover with baking paper and bake for another 30 minutes.
    7.[FONT=&quot] [/FONT]Remove cake from the oven and leave for 5 minutes, then turn out of the baking tin and cool. Wrap in greaseproof paper and leave it in a tin
    to enrich for a week as it improves with age.

    (I make it in a 2lb tin and it takes 1hr 15 mins to bake)



    Banana Bread
    (great for using up those over ripe bananas)

    3 very ripe bananas (almost walking) or use defrosted frozen bananas!
    pinch of salt
    6oz melted butter
    1 teaspoon bicarb of soda dissolved in 1 tablespoon water
    6 oz caster sugar
    1 egg
    9 - 10 oz plain flour

    Smash bananas (food processor is great for this recipe).

    Add remaining ingredients, mix together. Pour into 2 greased or paper lined 1lb loaf tins or 1 lined 2lb tin.

    Bake in moderate oven (180C/350F/Gas mark 4) for 45 minutes. Will also make as muffins. Freezes well and is lovely sliced, toasted & dripping with melted butter.

    Erm, how about a hidden cake, that won't be found & eaten before your visitors arrive?

    Parkin or gingerbread are better a couple of days after baking, and so is tea loaf / brack.

    Also, "yes" to drop scones, you can make & freeze them layered with foil / baking paper, then defrost overnight & reheat on the griddle - will score you major breakfast brownie points (and they'll be assumed to be h/m fresh that morning if you put a bowl & whisk in the sink & fill with water as if they have been used ;))

  • Could you just make a victoria sponge and freeze it until the day before they arrive. Defrost, spread with jam and cover with icing sugar and voila ready made cake!

    Nigella's chocolate and orange cake gets better as it ages, and keeps easily for about 10 days (though it doesn't usually last that long in this house!)

    If you don't have a freezer, I don't think drop scones would last more than a day in the fridge without going nasty. Could you make up a pancake mix, so that all you had to do in the morning was measure out a small amount, add egg and milk and make them there and then? Otherwise flapjacks are nice for breakfast and also get better as they mature.

    You could also make some of Twinks hobnobs for snacking purposes. They are delicious, easy to make, and would easily keep for a week in an airtight box if they weren't all eaten on the same night!

    I am newly a big fan of weetabix cake! It's really quick and easy to make and very cheap too. I've been making it quite regularly recently as DD likes it in her packed lunches and it certainly works out cheaper than some other treats. I usually slice it up once it has cooled and keep it in an airtight container - it will easily last a week as long as I can keep her away from it!

    I don't know how to post a link to a thread - but it does have one to itself so a search should do it.

  • How about Nigella's Chocolate Fruit Cake? It's a doddle to make and will easily keep for a week.

    Thanks so much guys, I will have to make few different sorts as some will undoubtable fail OH's mums food vibration test (don't ask, you really don't want to know :rolleyes: ).

    I might be able to get drop scones in the freezer compartment of the fridge as I think there is a bit of space in there at the moment. They would only need to be in there a day or two.
