Vegetarian/Vegan quiche - using store-cupboard ingredients?

Hi folks!

Please can I tap your vast collection of knowledge for a cheap dinner to make for tonight? I know it's late - my SO is working away today and we won't be eating until about 9.30! I'm vegetarian trying to become vegan over time, so I have some veggie and vegan stuff already in.

I need to use what I've got in and not spend any more money, so I thought that maybe I could make a peanut quiche? I've never made one before! I have no idea about quantities/cooking times etc. (I have a gas cooker.)

Does anyone have a recipe that I could make with some or all of the following ingredients?

Frozen white shortcrust pastry (a bargain, reduced)
Self-raising flour
Silken (firm) tofu
Quark 99% fat free
Philadelphia light (half a small tub)
Cheddar cheese
Vegetable oil
Unsalted butter
Vegan margarine
White/red onions
Value crunchy peanut butter
Mixed chopped nuts (about 25g)
Sun-dried tomatoes in oil (4 or 5 small ones)
Spicy (chili/garlic) green olives (about a dozen)
Dried mixed herbs

Also, would it work to add a bit of peanut butter and flour to the pastry to give it a nutty flavour?

    There's this recipe here, but no peanuts in it.
    Enjoy the little things, for one day you may look back and realize they were the big things.

  • To make sexymouse's recipe a peanut one I would spread a layer of peanut butter onto the pastry case base after you have rolled the pastry out.

    That's fabulous - thank you!

    A few years ago I saw a quiche recipe that had a peanuty filling and nuts in the pastry (it had eggs and cream cheese though) and I've wanted to make it (fancied eating it!) ever since! Maybe I could use less milk; and substitute the spinach for a dollop of peanut butter! I've got a bit of wholegrain mustard and nutmeg too!

    I've never made a tofu/egg-less quiche before. Hopefully my substitutions won't make a pig's ear out of it! ;)

    I'll let you know how it went, tomorrow evening! :D
