Left over roasted veg

Hi everyone . I am need of some quick inspiration . I have a tupperware full of left over roasted veg from Saturday. Does anyone have any ideas how to use it up , other than just reheathing. Thanks :confused:

monthly budget £600 for food, petrol , going out household/vets bills etc

    1. Freeze it and use another day
    2. Soup
    3. Crumble goats cheese on it and serve with pasta, or wrap in puff pastry and bake. In both these cases I'd probably add some spinach and maybe some peppers and chopped tomatoes to the mixture (tinned toms with juice if on pasta to make it a wetter sauce)

    If you've got roast potatoes left over, we've found that reheating them for about 10 - 15 minutes next day brings them back as ...roasties! I'm told everyone loves roasties ... except me! (Gimme mash or boiled!)

    Other veg, we tend to pour cheese sauce on them and bake them for about 20 minutes and have cauliflower/broccoli/carrot/cabbage cheese with sausages or bacon (whatever happened to be cheap)!

    I always make soup with the left over roast veggies.

    So easy and so tasty too.

    Make a big pile of cous cous up, reheat the veggies (dry fry them to crisp them a bit) and mix into the cous cous.

    Mmmmmmm - making myself hungry now!

  • I made soup which we have just had. It was very yummy and I have frozen the rest to either make soup or something else.... Thanks for the tips
