Thank you all for your responses - my sister and I are leaving the husbands at home to look after the kids, as its something we have wanted to do for a long time! We did plan to do it for my sisters 40th, then my 40th, so we will get it do before my sisters 50th, which is next year!

You could also consider going to Italy by train.

More expensive than 1p flights but you save on a night's hotel.
An understatement, the maximum potential saving is 4 nights for a return journey to northern Italy (6 nights for the south) as you can stop in Paris and by flying you may arrive in the evening and leave in the morning.
The saving in hotel costs may be greater than the train fare.0 -

True, you can take several days over the trip but normally only one night is involved. Leave London at 1.30, a drink in Paris, dinner and a night on the train and arrive in Rome at about 10 o'clock the next morning (earlier for northern cities like Bologna and Florence). A very civilised way of travelling and it makes the journey part of your holiday.0 -
Italian intercity trains can, like British ones, be booked in advance online for cheaper fares. You print your own ticket, so there's no need to worry about them getting lost in the post. Instructions and links here: http://www.seat61.com/Italy-trains.htm#How%20to%20use%20Trenitalia.com Amica fares are the cheap ones.0
