Cat - sausage caserole is a firm fave in our house too... well sausages in onion gravy especially, i really like making a herby one with tinned tomatoes and baked beans, but the others aren't so keen on that.... dumplings sound lovely.....

Funny, I was just thinkin about you Maz and your weigh in today. I have lost another 1lb but I have eaten out 3times last week and eaten home cooked meals on Sunday - I am finding it hard with OH being around....he's going back to work next week so I am hoping I will get back to it properly.Quality is doing something right when no one is looking - Henry Ford

i'm not going to worry too much if i don't have much of a loss tonight... i know i am trying my best...
anything i have been nibbling on, which is not every day, is generally a slice of ham, or a sausage.. not a carb has crossed my lips, and haven't been out of ketosis as far as i can see... should have something to report... but won't let it upset me anyway...
it's hard cause i know i've not been 100% good, i.e. the meal out last thursday but i did try to be good... i'll settle for a lb off this week!

from memory - will edit tonight (in red) if my memory has failed me!
casserole ingredients:
4 stalks celery - cut into pieces
1lb carrots - peeled and cut into pieces
1 large (2 medium/small) onions - peeled and sliced
1 pack sausages (we use vegetarian lincolnshire but and sausage will do)
1 tin choppoed tomatoes
vegetable stock (about 450ml)
tablespoon plain flour
tablespoon oil
tablespoon herbs (or seasoning to taste)
dumpling ingredients:
115g self rasing flour (I use plain and add 2 teaspoons of baking powder)
60g suet (again I use vegetarian suet)
1 tablespoon dried mixed herbs - whatever you have in store or fancy
pinch of mustard or paprika (or any other spice you fancy using)
60g mature cheddar - grated
3 tablespoons milk
3 tablespoons water
directions:
Set oven to gass mark 4 (no idea what celsius or farenheit this is).
In a casserole pan add onion, carrots, celery and oil over moderate heat and cook until softened (about 5-10 minutes). Add the flour and cook for a minute until flour absorbed. Brown sausages under the grill, chop in to pieces and add to the vegetables. Add the tinned chopped tomatoes and vegetable stock and herbs or seasoning. Cover and transfer to oven for 55 minutes.
Make up the dumplings - mix flour, suet, herbs, mustard/paprika powder and 1/3 cheese. Add water and milk and mix. Split into 8 equal sized dumplings (they look really small but they do expand whilst cooking).
Turn oven up to GM6 and add dumplings (I tend to sit them in the liquid but that their tops are clear of the liquid IYSWIM! Cover and cook for 30 minutes. Remove lid and add remainder of cheese to tops of dumplings and cook without lid until cheese has melted.
Serve with crusty bread or green vegatables.

We've got snow too, started about an hour and a bit ago, still falling! :cool:
I'm just in the office today, so nothing too exciting to report, although I did knock in about 4 hours overtime last nightyay me hehe! That'll help nicely come payday.
I think I'm gonna raid the freezer tonight, got some mince in there methinks so that'll be a big pot of mince 'n' tatties for the next few days. Its amazing how long food lasts when you're only cooking for one :T
Ohhh just remembered there's parsnips in the fridge too, anyone for some lovely warming homemade curried parsnip soup??
