    Today I have/will

    1. Checked online banking
    2. Played free scratchcard
    3. Pigsback ( I actually had a ct:j)
    4. Entered received post on research international
    5. Walked dog
    6. Watch moses jones on i player
    7. Going to holiday on ice tonight but will take drinks etc. with me as the arena charges £2.20 a can:eek:

  • gutted.....went home at lunchtime and am being taken through the small claims court for a debt. Lovely letter waiting for me. Its one of my smaller secondary ones and has a bit of an emotional thing with it as it is the remainder of my dads funeral bill :( Just making me feel bit crap

    Missed posting this morning - been rushing out at 8 o'clock recently, so keen I am;)
    Anyway here's todays list....
    • Check banking
    • Scratchcards - 50p and 10p
    • Post ebay parcels
    • Take lunch to work and resist buying a diet coke on way back from PO!
    • LSD - only bought a roll of brown paper for ebay parcel
    • Return dvd to Love Film (from free trial)
    • Dinner - spag bol for girls using mince from freezer, last night's leftover pasta bake for me.
    • Heating off as early as poss
    • Check Quidco - Lovefilm not tracked at all, will chase up after 14 days
    • Check Pigsback, had one CT yest, doubt I'll get another today:p
    • College work
    • Start thinking about UCAS personal statement:eek:
    • Check co-op for whoopsies in a while
    That's my lot for today:D

  • Just sold a load of old DVDs on MusicMagpie and also signed up to that music reviewing sit, slicethepie and worked on that for half an hour. Will do more later tonight I think, it's quite fun except you can't just skip songs you don't like.

    A couple of people have asked for this - no copyright issues, as I got it from my Nan many years ago (and I am a grandma now, so a long time ago), and I don't know where she got it from, probably family again, they were a farming family, so seasonally would have had a lot of eggs to use up. There are published versions in lots of cookbooks by the way, which are more or less variations on the same theme, but this seems much simpler.

    You need:
    zest and juice of 2 lemons
    3 eggs
    8 oz sugar
    3oz butter (NEVER margarine!)

    Put lemon zest and juice in a pan with the butter and sugar. Melt together over a low heat. When melted add whisked eggs. Stir over a very low heat (if necessary put in a basin over hot water) till thick enough to coat the back of a wooden spoon. Remember it will get thicker as it cools. It is great for filling sponge cakes (with whipped cream for a special treat, my family's favourite birthday cake), or on toast. I also have a really nice biscuit recipe from the Guardian that uses it.

    Main thing to remember is to avoid excess heat once the eggs go in, to avoid ending up with a horrible sort of lemony scrambled egg.

    *Store in fridge and use within 2-3 weeks, so best made in small quantities. I make double usually, as my DDs tend to steal jars of it! It is funny, they made it themselves quite often when they were at home but steal mine now....

    Despite the amount of sugar, it is a bit sharper than bought curds. You can experiment with orange, lime and grapefruit curd as well if you like. Orange tends to need a bit less sugar in my experience. Let me know how you get on :j :j :j
  • As promised, my chocolate orange cake reciepe :)

    Cake
    115g Unsalted Butter
    115g Caster sugar
    115g Self raising flour
    2 Tbsps Cocoa Powder
    2 Eggs
    1 tsp Baking powder
    Grated rind & Juice Orange
    55g Plain chocolate drops (optional)

    Topping
    115g Plain Chocolate
    55g Unsalted Butter
    55g Icing Sugar

    Method
    1. Line & grease 2 low sided 7" cake tins.
    2. Put cocoa in a bowl and add 2 Tbsps of boiling water. Make into a paste and leave to cool.
    3. Cream the butter and sugar together in another bowl until light and fluffy. Add to the cocoa mixture.
    4. Beat the eggs and add gradually to your buttery cocoa mixture, stirring with a wooden spoon.
    5. Grate orange rind into mixture. Add the chocolate drops (if using)
    6. Sieve flour and baking powder in to the mixture and fold in gently with a metal spoon.
    7. Add two tablespoons of orange juice or until the mixture drops of a spoon.
    8. Bake at 160C for an hour - hour and fifteen or until it's springy to touch.

    9. When the cakes are cooled. Heat the chocolate and butter together in a bowl over a simmering pan, when melted sieve in the icing sugar and stir. Use to stick the two cakes together and spread over the top.
