    you can grate or chop apple and add as is - just reduce the liquid a little as will release juice on cooking! As is cooking apple, may want to increase sugar a tad but depends on how sweet you like it!

    Or could cook and use as puree - add to liquid ingredients or use as filling as substitute for jam donut

    I would add a little cinnamon too!

    I think Susan Reimer has a apple recipe version in her book - an look it up
    and post if you like.

    I like the sound of the coconut variations - will have to try that in next batch!

    Muffins are fantastic! I also bake in loaf tins to get cakes - the coconut and cherry one would be good that way! Only thing is loaf cake doesn't last as long as a dozen muffins!

    Hmm maybe I'll knock up a batch for breakfast tomorrow - plain with jam and butter for brekkie...:drool:

    I've just made some coconut banana muffins but I suppose you could use cherries instead :confused:

    2 cups plain flour
    1/2 cup sugar

    1 tbsp baking powder

    1 tsp cinnamon

    1/2 tsp salt

    3/4 cup shredded coconut

    1 cup milk

    1 large egg, beaten

    1/3 cup vegetable oil

    1 cup mashed bananas

    1 teaspoon vanilla extract


    Usual method of mixing all dry ingredients in one bowl, the wet ones in another, then stirring into dry. Bake at 190C/Gas 5 20 mins.


    Well. I just put this recipe to the test.

    No way this enough liquid. I realised this halfway through mixing dry and wet together! Added an extra egg, another 2 tbns of oil and 4 tbns milk. Still a fairly heavy mix and of course ultimately probably had more stirring than it should. I will report back on how they turn out.

    Won't be a happy bunny if I've wasted the ingredients though. :mad:

    PS I used proper cup measures, not just any teacup.


    PPS - well all I can say is thank goodness I have a reasonable amount of baking experience and was able to rescue what could have been a disastrous waste of ingredients. They are actually delicious :)
