    Thanks Thrift lady, think i will give the wholemeal ones a go. When you say substitute half wholemeal flour, do you mean use hald plain and half wholemeal?
    Sorry for the stupid question, Im having one of those days.

    Yes,that's right honey I use 1 cup of white plain flour(4 1/2 oz) and 1 cup of wholemeal plain flour.You can see how much easier it is to measure with US cups,esp with US recipes like muffins.Of course wholemeal flour is more expensive..grrr.

    Thank you guys, I have just gone and got my coconut and cherries, I will possibly try them tonight or the weekend :)
  • i have a spare cooking apple that needs to be used up...

    could i chop it up into small chunks and add to mixture...

    or would you ping them in the microwave first so its like an apple sauce.. before adding to mixture :confused:

    Another vote for Susan Reimer's muffin book here. I also bought it from Lakeland, and use it more than any other baking book.

    It's funny how the books I use most are not the big glossy TV chef books but little unassuming books like this. The other type are for reading rather than using.

    You could do either. If you cook it you would need to let it cool before adding it.
